While the saying "a cookie a day keeps the doctor away" is certainly cute and dear to my heart, I don't actually think it's true. At least not those oh so divine cookies that are loaded with butter, refined sugars, and processed flour. Nothing wrong with those cookies, but I want a cookie I can enjoy every single day guilt-free. Enter in these thick and chewy Almond Butter Healthy Thumbprint Cookies.
I’m not a crazy pumpkin person. It’s practically sacrilege to say that come fall but it’s the truth. Chai, on the other hand, I quite enjoy. It has a slightly spicey edge full of warm cinnamon notes. So I figured I could weather another pumpkin treat as long as I paired it with something I like. And the results were phenomenal. I can assure you pumpkin nay-sayers, it’s freakin’ delicious with chai.
I have wanted to use my beloved balsamic vinegar in a cake for a while now and my cake idea lightbulb went off when I saw a box of cherry jell-o in my dad’s kitchen cupboard. I immediately knew that the sweetness of cherry would contrast beautifully with the zing of balsamic. I love a texture element in most of my cakes so I added some mini chocolate chips and an oh so decadent chocolate cookie crumb base to give you a crunch in every bite.
A cookie should spark joy. And these strawberry almond sprinkle cookies spark absolute pure joy. Hot pink cookies loaded with sprinkles and white chocolate chips, what's not to love? This cookie recipe has quickly become a family favorite and I bet you'll feel the same way too.
