Chocolate Chip Cookie Cake

The crowd has spoken. And spoken quite clearly, might I add. A chocolate chip cookie cake has been highly requested on repeat and I'm here to please. Four fluffy chocolate chip cookie cake layers packed full of brown sugar and mini chocolate chips and all wrapped in the most wonderful whipped brown sugar cream cheese buttercream frosting. Oh, and did I mention I added a ridiculously delicious amount of chocolate chips to the cookie dough-like frosting too?!

I wanted this dreamy dairy-free chocolate buttercream frosting to be the star of the show so I paired it with moist pumpkin espresso cake layers. The slight acidity of the espresso pairs well with the intense chocolate and pumpkin really smoothes both contrasting flavours out. Have you ever baked with pumpkin? Because you really should.

I love me an espresso. There’s something about that petite little cup and rich aroma that makes me feel oh so fancy. I can imagine myself sitting in a Parisian cafe, wearing the latest fashion, and sipping on a freshly brewed espresso. Damn…my alter ego is chic. But here’s the incredibly sad and embarrassing truth.
