- 1 3/4 cups (350g) brown sugar
- 1/2 cup (120ml) sour cream, room temperature *regular or dairy-free
- 1/2 cup (120ml) vegetable oil
- 4 large eggs, room temperature
- 2 teaspoons vanilla extract
Milk Mixture
- 1 can (12oz/354ml) evaporated milk *regular or dairy-free
- 1 can (14oz/396ml) sweetened condensed milk *regular or dairy-free
- 1/3 cup (83ml) whole milk *regular or dairy-free
Whipped Topping
- 2 cups (480ml) heavy whipping cream *regular or dairy-free
- 3 tablespoons (25g) powdered sugar
- 1 teaspoon vanilla extract
- pinch fine sea salt

Instructions
Pumpkin Cake
- Preheat the oven to 350 degrees and prepare a 9×13-inch baking dish with non-stick baking spray.
- In a large mixing bowl, combine the flour, baking soda, cinnamon, salt, and nutmeg.
- In a separate mixing bowl add the pumpkin puree, brown sugar, sour cream, vegetable oil, eggs, and vanilla extract. Whisk together until fully combined and smooth.
- Add the dry ingredients into the wet ingredients and mix until just combined.
- Pour into the prepared baking pan and bake for approximately 35-45 minutes or until a toothpick comes out with a few moist crumbs.
