These soft and buttery Frosted Anise Cookies are topped with a light, fluffy anise buttercream for a classic old-fashioned cookie that’s perfect for holidays, celebrations, or everyday baking.

Anise Cookies
- 1 cup (227g) salted butter, room temperature *regular or dairy-free
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 teaspoon anise teaspoon
- 3 cups flour *all-purpose or gluten-free 1:1 baking blend
- 2 teaspoons baking powder
- pinch of fine sea salt
Anise Buttercream
- 1/2 cup (113g) salted butter, room temperature *regular or dairy-free
- 1 cup (120g) powdered sugar
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon anise extract
- 1/4 teaspoon fine sea salt
- optional: sprinkles
Instructions
- Preheat the oven 350ºF and prepare to large cookie pans with parchment paper.
- Cream together the butter and sugar until light and fluffy. The should take approximately 2-3 minutes.
- Add the eggs, vanilla extract, and anise extract. Beat until fully combined and smooth.
- Add in the flour, baking powder, and salt and mix just until a dough forms.
- Use a large 3-tablespoon cookie scoop to portion the cookie dough and place with room to spread on the prepared cookie trays. With the palm of your hand, gently flatten each cookie dough ball.
- Bake for 8-10 minutes or until, the centres have puffed up slightly and the edges are set. Remove from the oven and allow to cool fully on the cookie pan. While the cookies are cooling, prepare the frosting.
- Cream the butter on high speed until light and fluffy. This should take approximately 5-10 minutes.
- Add in the powdered sugar, vanilla extract, anise extract, and salt and mix on low until combined.
- Turn up to high speed and mix for 5 minutes. With a 1M piping tip, pipe the buttercream on the fully cooled cookies and top with sprinkles if desired. Enjoy.
- Store leftover cookies at room temperature for up to 3 days, in the fridge for up to 5 days, or frozen for up to 3 months.
