Salted Caramel Sauce
- 1 cup (100g) granulated sugar
- 1/4 cup (60ml) water, room temperature
- 6 tablespoons (85g) dairy-free salted butter, cubed & room temperature
- 1/2 cup (120ml) dairy-free heavy cream, room temperature
- 1 teaspoon vanilla
- 1 – 1 1/2 teaspoons fine sea salt, to taste
Caramel Cupcakes
- 1 1/4 cups (200g) gluten-free flour 1:1 baking blend
- 3/4 cup (150g) granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 3/4 cup (180ml) dairy-free milk, room temperature
- 1/4 cup (60ml) vegetable oil
- 1/4 cup (60ml) dairy-free salted caramel sauce
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
Salted Caramel Frosting
- 1 cup (227g) dairy-free salted butter, room temperature
- 1/2 cup (120ml) salted caramel sauce, room temperature
- 2 cups (240g) powdered sugar
- 1 1/2 teaspoons fine sea salt
Instructions
Salted Caramel Sauce
- Have all of the ingredients measured and ready for use before you begin. Caramel can burn easily and it’s best to be prepared for every step.
- In a medium pot, add the sugar and water and gentle swirl together to combine. Try to avoid splashing the mixture up the sides of the pot.
- Begin to heat the mixture over medium heat until the sugar dissolves, the liquid becomes clear, and it starts to boil. This can take approximately 2-3 minutes. Do not stir.
- Continue to cook over medium heat, without stirring, until the mixtures thickens and turns a deep honey/amber color. This can take between 8-15 minutes. Do not leave the pot unattended. The sugar can go from caramel to burnt in a matter of seconds.
- Once the honey/amber color is achieved add the cubed butter and whisk until fully melted and combined. Note that the caramel will rapidly bubble up during this step so be careful.
- Remove the pot from the heat and slowly pour in the heavy cream, Continue to whisk vigorously until all the cream has been incorporated.
- Add in the vanilla and salt and whisk again until fully combined.
- Allow the caramel to cool in the pot for 5 minutes before pouring into a glass jar and allowing to fully cool. The caramel will continue to thicken as it cools.
Caramel Cupcakes
- Preheat the oven to 350ºF and prepare a 12 cavity cupcake pan with cupcake liners.
- In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt and whisk together.
- In a separate mixing bowl, combine the milk, oil, caramel sauce, egg, and vanilla extract and whisk together until fully combined and smooth.
- Pour the liquid mixture into the dry ingredients and stir until just combined. Be careful to not overmix.
- Divide the batter equally into the cupcake liners and bake for approximately 18-20 minutes or until lightly golden and a toothpick comes out with a few moist crumbs.
- Allow to cool for 5 minutes before removing to a wire wrack to fully cool.
Salted Caramel Frosting
- In a stand mixer or with a handheld electric mixer, cream the butter and caramel sauce on high speed until light and fluffy. This will take approximately 5-10 minutes.
- Measure in the powdered sugar and salt and begin to mix on low. Scrape down the sides of the bowl to ensure everything is incorporated.
- Turn the mixer up to high and allow to beat for another 5 minutes.
