  • 1/4 cup (60ml) water, room temperature
  • 6 tablespoons (85g) dairy-free salted butter, cubed & room temperature
  • 1/2 cup (120ml) dairy-free heavy cream, room temperature
  • 1 teaspoon vanilla
  • pinch of fine sea salt *

Instructions

  1. Measure all ingredients before you begin. Caramel burns easily, so it is best to be prepared.
  2. Add the sugar and water to a medium pot. Gently stir to combine. Try not to splash the sides of the pot.
  3. Heat over medium heat until the sugar dissolves. The liquid will clear and start to boil. This takes 2-3 minutes. Do not stir.
  4. Cook over medium heat without stirring. Watch for the mixture to thicken and turn into a deep amber colour. This takes 8–15 minutes. Do not leave the pot alone. It can burn in seconds.
  5. Carefully add the cubed butter when the liquid turns amber. Whisk until it melts. Watch out, as it will bubble up fast.
  6. Remove the pot from the heat. Slowly pour in the heavy cream. Whisk constantly until the sauce is completely smooth.
  7. Add in the vanilla and salt and whisk again until fully combined.
  8. Cool in the pot for 5 minutes. Pour into a glass jar to cool completely. The sauce thickens as it cools. Cover and store in the fridge for up to 2 weeks. Enjoy!
