The Best Oatmeal Coconut Chocolate Chip Cookies
These cookies are the perfect mix of comforting and elevated, with layers of texture and flavour that make them stand out from your average chocolate chip or oatmeal cookie. They’re simple enough for everyday baking but special enough to feel like a treat. Here’s why you’ll love them:
- Perfect Texture: Soft, chewy centres with lightly crisp edges for that classic bakery-style bite.
- Hearty and Satisfying: Rolled oats and coconut add substance and make these cookies extra filling.
- Balanced Sweetness: The mix of sugars and coconut creates a rich, not overly sweet flavour.
- Easy to Make: No complicated steps, just simple ingredients and straightforward mixing.
- Customizable: Easily make them gluten-free or dairy-free with simple swaps.
- Great for Any Occasion: Perfect for meal prep, lunchboxes, or a cozy baking day at home.

Oatmeal Coconut Chocolate Chip Cookies Ingredients & Substitutions
This recipe uses pantry staples and is very forgiving when it comes to swaps and substitutions. Pay close attention if you need gluten-free and/or dairy-free swaps.
- Salted Butter: Adds richness and flavour. Use dairy-free butter for a dairy-free version. I love to bake with Becel plant-based bricks.
- Granulated Sugar: Helps create crisp edges. Swap with cane sugar or coconut sugar, but note that it will slightly deepen the flavour.
- Brown Sugar: Adds moisture and chewiness. Use all brown sugar for extra soft cookies or sub with coconut sugar.
- Eggs: Provide structure and bind the dough. If you are egg-free or vegan, use flax eggs (1 tbsp ground flax + 2.5 tbsp water per egg).
- Vanilla Extract: Enhances flavour. Vanilla bean paste will work or omit it enitely in a pinch.
- All-Purpose Flour: Gives the cookies structure. Use a 1:1 gluten-free baking flour blend that contains xanthan gum if you are gluten -free
- Rolled Oats: Add chew and texture. Swap with gluten-free rolled oats if needed.
- Shredded Coconut: Adds sweetness and chewiness. Use unsweetened or sweetened coconut depending on preference. I personally prefer unsweetened.
- Salt: Balances sweetness. Kosher salt will work as well.
- Baking Soda & Baking Powder: Helps cookies spread and lift.
- Chocolate Chips: Adds rich melty sweetness. Use what kind of chocolate you prefer; semi-sweet, dark, milk, chunks, etc. Swap with dairy-free chocolate chips, if needed.

Fun Oatmeal Coconut Cookie Flavor Twists
This cookie dough is super versatile, making it easy to customize depending on what you’re craving or what you have on hand. Let me know if you try one of these variations.
- Nutty Crunch: Add chopped walnuts or pecans for extra texture.
- Tropical Twist: Mix in dried pineapple or mango for a fruity coconut combo.
- Dark Chocolate Lovers: Use dark chocolate chunks instead of chips for pockets of richer flavour.
- Warm Spice: Add cinnamon or a pinch of nutmeg for a cozy flavour.
- Extra Coconut: Toast the coconut before adding for a deeper, nuttier taste. A ½ teaspoon of coconut extract will also amp up the coconut flavour.
