Whether you’re baking for a picnic, brunch, or just a cozy afternoon treat, these bars are simple to make and easy to customize for gluten-free or vegan diets. Here’s why they’re a must-bake:
- Bright & Fresh Flavor: Zesty lemon paired with juicy raspberries creates a vibrant, tangy-sweet combination.
- Buttery Shortbread Base: Soft, rich, and slightly crumbly with golden edges.
- Naturally Beautiful: The ruby raspberry layer peeking through the crumble topping is stunning.

- Perfect for Sharing: Slice into neat squares for parties, picnics, or lunchbox treats.

Lemon Raspberry Bars Ingredients & Substitutions
These simple ingredients come together to create layers of flavor and texture in every bite.
- Granulated Sugar: Sweetens both the crust and the filling while helping create structure. Organic cane sugar can be used.
- Lemon Zest: Adds bold citrus flavor directly into the shortbread base.
- Salted Butter: Creates a rich, tender crust. Use plant-based butter for a vegan option.
- Vanilla Extract: Enhances the sweetness and rounds out the flavors.
- Flour: Forms the base of the shortbread. Use all-purpose or a 1:1 gluten-free blend.
- Fine Sea Salt: Balances sweetness and enhances flavor.
- Raspberries: The star of the filling: tart, juicy, and naturally sweet. Fresh or frozen, both work. If using frozen, thaw first and drain excess juice.
- Lemon Juice: Brightens the filling and ties everything together. Fresh is always best, but bottled will work.
- Cornstarch: Thickens the raspberry layer so it sets beautifully. Tapiocha starch can be used as well.
- Powdered Sugar: Creates a smooth, sweet glaze.
- Extra Lemon Juice (for glaze): Adds a tangy finish and balances the sweetness.

- Form dough: Mix in the flour and salt on low speed until a crumbly dough forms.
- Build the base: Press ⅔ of the dough evenly into the prepared pan.
- Make filling: Toss raspberries with sugar, lemon juice, and cornstarch until combined.
- Layer filling: Spoon the raspberry mixture over the crust, leaving excess liquid behind.

Berry Shortbread Bars Helpful Hints
A few simple tips will help ensure your bars turn out perfect every time.
- Zest First: Always zest your lemon before juicing for ease and maximum flavor.

Fun Flavor Ideas & Twists
Once you’ve made the classic version, there are so many ways to switch things up. These variations keep the same base but add new flavor profiles.
