Ingredients
- 1/2 cup (113g) dairy-free salted butter, room temperature
- 1 cup (200g) granulated sugar
- 1 teaspoon vanilla extract
- 3 medium overripe bananas, mashed (approximately 1 cup)
- 2 large eggs, room temperature
- 1 3/4 cups (210g) gluten-free flour 1:1 baking blend
- 1 teaspoon fine sea salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- optional: 1 cup chopped nuts and/or dairy-free chocolate chips
Instructions
- Preheat the oven to 350ºF and prepare a 9×5 inch loaf pan with non stick baking spray and parchment paper.
- In the bowl of a stand mixer or large mixing bowl with an electric mixer, beat together the butter, sugar, and vanilla extract until light and fluffy. This should take approximately 2-3 minutes.
- Add in the eggs, one at a time, and mix until fully combined.
- Gently fold in the mashed bananas and mix until just combined.
- Measure in the flour, salt, baking soda, and baking powder and mix until just combined. Be careful to not over-mix the batter.
- Gently fold in the chocolate chips and/or nuts if using.
- Spread the batter into the prepared loaf pan and bake for approximately 50-60 minutes or until a toothpick inserted in the centre comes out clean or with a few moist crumbs.
- Remove from the oven and allow to to cool for 10 minutes before removing to a wire rack to fully cool. Enjoy!
- Store leftover banana bread in an airtight container at room temperature for up to 3 days, 5 days in the fridge, or up to 3 months in the freezer.
