- Apple cider vinegar: Creates a vegan buttermilk (swap with white vinegar or lemon juice). Omit if using regular buttermilk.

- Sugar: Sweetens the filling, and again, organic cane sugar is a great alternative.

- Butter: Any type of butter, plant-based or regular, will work.

- Butter: Use any kind of butter that fits your dietary needs, but note that it must be in brick form. I love to bake with Becel plant-based bricks.
- Lemon zest: Adds fresh citrus flavor; fresh is best.
- Powdered sugar: Sweetens and stabilizes. You could swap it with a sugar-free powdered sugar such as Swerve, but note that it does alter the taste.
- Lemon juice: Boosts lemon flavor, and again, fresh is best, but bottled will work.
For the Ganache Drip
- Chocolate chips: Any type of semi-sweet chocolate chips or a chocolate bar will work, so use whatever best fits your dietary needs.
- Heavy cream: Creates a silky ganache. Use a dairy-free heavy cream such as Silk, canned coconut cream, or regular heavy cream if you are not dairy-free/vegan.

Chocolate Cake
- Prep: Preheat the oven to 350°F and prepare two 8-inch cake pans with non-stick spray and parchment paper.
- Make vegan buttermilk: Combine plant-based milk and apple cider vinegar, whisk, and let sit to curdle. Skip this step if using regular buttermilk.
- Mix dry ingredients: Whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Ingredients
Chocolate Cake
- 1 cup (240ml) plant-based milk, room temperature
- 1 tablespoon (15ml) apple cider vinegar *see note if not dairy-free/vegan
- 2 cups (240g) gluten-free flour 1:1 baking blend
- 1 3/4 cups (350g) granulated sugar
- 3/4 cup (60g) cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 cup (120ml) vegetable oil
- 2/3 cup (160g) plant-based sour cream
- 1 tablespoon (15ml) pure vanilla extract
- 1 cup (240ml) hot coffee *can sub hot water
Lemon Filling
- 1 cup (240ml) lemon juice
- 1/2 cup (120ml) plant-based milk
- 1/4 cup (50g) granulated sugar
- 2 tablespoons (16g) cornstarch
- 1/4 teaspoon fine sea salt
- 2 tablespoons (28g) plant-based salted butter
- optional: yellow gel food color
Lemon Buttercream
- 2 cups (454g) plant-based salted butter, room temperature
- 1 tablespoon lemon zest
- 4 cups (480g) powdered sugar
- 1 tablespoon (15ml) lemon juice
- 1 teaspoon fine sea salt

Chocolate Ganache Drip
- 1/4 cup (43g) plant-based chocolate chips
- 1/4 cup (60ml) plant-based heavy cream
Instructions
Chocolate Cake
- Preheat the oven to 350ºF and prepare two 8-inch round cake pans with non-stick baking spray and parchment paper.
- In a small glass, combine the milk and apple cider vinegar. Whisk it tighter and set it aside to “curdle.” If you are using regular buttermilk, skip this step.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt. Create a well in the centre.
- To the dry ingredients, add the oil, sour cream, vanilla, and buttermilk. Whisk together until well combined.
- Slowly pour in the hot coffee and whisk until combined.
- Divide the cake batter evenly between the two prepared cake pans and give each pan a gentle rap on the counter to release any air bubbles.
- Bake the cake layers for approximately 30-35 minutes or until a toothpick inserted in the centre comes out clean or with a few moist crumbs. Allow to cool for 10 minutes before inverting on a rack to fully cool.
Lemon Filling
- In a small, heavy-bottomed pot, combine the lemon juice, milk, sugar, cornstarch, and salt, then whisk together until smooth.
- Begin to cook over medium-high heat. Continue to whisk as the filling begins to thicken. This should take approximately 5 minutes.
- Remove from the heat and add in the butter and food color (if using) and mix until fully melted and combined.
- Pour into a shallow dish and immediately cover the surface directly with plastic wrap. Allow it to come to room temperature before using it in the cake. It will thicken even more as it cools.
Lemon Buttercream
- In the bowl of a stand mixer with the paddle attachment, beat the butter and lemon zest on high speed until light and fluffy. This should take approximately 5-10 minutes.
- Add in the powdered sugar, salt, and lemon juice and mix on low until combined. Add 2-3 drops of yellow gel food color if desired.
- Turn the mixer up to high and let mix for 5 minutes until smooth and fluffy. Scrape the sides of the bowl when necessary.
Chocolate Ganache Drip
- Combine the chocolate chips and heavy cream in a shallow microwave-safe bowl and heat in 30-second intervals, stirring after each interval, until fully melted and smooth.
- Allow the ganache to cool slightly before applying it to a well-chilled cake.
- If the ganache drip is too thin, add more chocolate. If the drip is too thin, add more heavy cream.
Cake Assembly
- Slice each cake layer in half (optional) and place one layer on a cake board, plate, and/or cake turntable and top with approximately 1 cup of frosting.
- Pipe a buttercream border around the top edge and fill with approximately ⅓ of the lemon filling.
- Repeat with the remaining cake layers and very gently apply a thin coat of buttercream to the entire cake. Chill the cake for 10-20 minutes. *If the cake feels unstable or the buttercream becomes too soft at any point while stacking, stop and chill the cake and frosting for 15 minutes.
- Cover the cake with a final layer of buttercream and smooth the sides and top with a cake smoother and/or offset spatula. Chill the cake for another 10-15 minutes.
- With a piping bag, drip bottle, or spoon, drip the chocolate ganache over the top of the chilled cake. Place back in the fridge until the drip has set. This should take approximately 10-15 minutes.
- Decorate the cake as you please. I piped buttercream swirls around the top of the cake with a Wilton 1m piping tip and placed chocolate squares and mini chocolate chips inside each swirl.
- Store leftovers in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months
Notes
If you are using regular buttermilk, omit the apple cider vinegar.
