Chocolate Chip Shortbread Cookies Ingredients & Substitutions
This recipe uses simple pantry staples that come together into something truly special. If you are not gluten-free and/or plant-based, pay close attention to the “regular” ingredient swaps listed.
- Dairy-free salted butter: Adds richness and that classic shortbread flavor; use vegan butter sticks for best results. Regular salted butter will work as well.
- Vanilla extract: Enhances the overall flavor with a subtle sweetness.
- Gluten-free 1:1 flour blend: Keeps the texture light and tender; regular all-purpose flour works if not gluten-free.
- Powdered sugar: Creates that smooth, delicate crumb that shortbread is known for.
- Cornstarch: Helps soften the texture and gives a melt-in-your-mouth finish. Arrowroot powder will work as a swap.
- Fine sea salt: Balances the sweetness and enhances flavor. Kosher salt can be used.
- Dairy-free mini chocolate chips: Evenly distributed chocolate in every bite; regular mini chocolate chips work too.
- Optional melted chocolate: For a simple but pretty drizzle on top.

Helpful Hints Chocolate Chip Shortbread Cookies
A few simple tips will help you get perfect shortbread every time.
- Don’t overbake: The cookies should stay pale with just-set edges for the best texture.
- Use soft butter: Room temperature butter creams more easily and evenly.
- Keep rolling even: Uniform thickness ensures even baking.
- Dust lightly: Too much powdered sugar on the surface can dry out the dough.
- Handle gently: Shortbread dough is delicate, so move cut cookies carefully.

Shortbread Cookie Fun Flavor Twists

Description
Buttery, tender, and perfectly sweet, these chocolate chip shortbread cookies are the kind of simple bake that feels a little bit fancy with very little effort. They have crisp edges, a delicate melt-in-your-mouth texture, and just the right amount of chocolate in every bite.
Ingredients
- 1 cup (227g) dairy-free salted butter, room temperature
- 1 teaspoon vanilla
- 2 cups (240g) gluten-free flour 1:1 baking blend
- 3/4 cup (90g) powdered sugar
- 2 tablespoons (16g) cornstarch
- 1/2 teaspoon fine sea salt
- 3/4 cup (130g) dairy-free mini chocolate chips
- optional: melted dairy-free chocolate and sprinkles for decor
Instructions
- Preheat the oven to 350ºF and prepare two large cookie sheets with parchment paper.
- In a stand mixer or large mixing bowl with an electric mixer, combine the butter and vanilla extract and beat together until light and fluffy. This should take approximately 2-3 minutes
- Measure in the flour, powdered sugar, cornstarch, and salt and mix on low until fully combined. The mixture will be crumbly at first. Keep mixing until a dough forms and pulls away from the sides of the bowl.
- Gently fold in the mini chocolate chips.
- On a clean countertop lightly dusted with powdered sugar, roll the dough into a rectangle about ¼ inch thick. Cut into desired cookie shape and transfer to the prepared baking sheet.
- Re-roll the cookie dough scraps and cut cookies until the dough is all used.
- Bake for 10-11 minutes or until the edges are just set. Be careful to not overtake the cookies as they will turn out dry and crumbly. Allow the cookies to cool on the baking sheet for 2 minutes before removing to a wire rack to fully cool.
- Drizzle the cooled cookies with melted chocolate and colorful sprinkles if desired. Enjoy!
- Store leftover cookies in an airtight container at room temperature for up to 5 days or frozen for up to 3 months.
