Peanut Butter Oatmeal Chocolate Chip Cookies Ingredients & Substitutions

These cookies use simple pantry ingredients that come together to create a soft, chewy, bakery-style cookie.

  • Salted butter: Adds richness and structure. Dairy-free butter works well as a substitute.
  • Creamy peanut butter: Provides the classic peanut butter flavor and soft texture. Natural peanut butter can work, but it may produce a slightly softer cookie.
  • Brown sugar: Adds moisture and a caramel-like sweetness. Dark brown sugar can be used for a deeper flavor.
  • Granulated sugar: Helps create lightly crisp edges. Organic cane sugar is a fabulous substitute.
  • Eggs: Bind the dough and help the cookies bake up soft and chewy. Two flax eggs will work for an egg-free sub.
  • Vanilla extract: Enhances the peanut butter and chocolate flavors.
  • Gluten-free 1:1 baking flour: Gives structure while keeping the cookies gluten-free. Regular all-purpose flour can be used if gluten-free flour isn’t needed.
  • Baking soda: Helps the cookies rise and spread slightly while baking.
  • Coarse sea salt: Balances the sweetness and enhances flavor. Fine salt can be used if that’s what you have, but reduce the amount.
  • Chocolate chips: Add gooey chocolate throughout the cookies. Use dairy-free chips if needed.
  • Gluten-free rolled oats: Create a hearty chew and texture. Quick oats can work in a pinch, but will make a softer, cakey-type cookie.
  • Salted peanuts: Add crunch and extra peanut flavor. You can substitute roasted peanuts or omit them if desired.

Peanut Butter Oatmeal Chocolate Chip Cookies Step-by-Step Instructions

These cookies come together quickly with a mixer and bake up beautifully thick and chewy. Preheat the oven, grab a spatula, and let’s get to baking.

  1. Prep: Preheat the oven to 350°F and line two baking trays with parchment paper.
  2. Cream butter and sugars: In a stand mixer or large bowl with an electric mixer, beat the butter, peanut butter, brown sugar, and granulated sugar together until smooth and fluffy, about 2–3 minutes.
  3. Add eggs and vanilla: Mix in the eggs and vanilla extract until fully combined and smooth.
  4. Mix dry ingredients: Add the gluten-free flour, baking soda, and salt. Mix on low speed until a soft cookie dough forms.
  5. Fold in mix-ins: Gently fold in the oats, chocolate chips, and chopped peanuts.
  6. Scoop the dough: Using a large 3-tablespoon cookie scoop, scoop the dough onto the prepared trays about 3 inches apart.
  7. Bake: Bake for 10–12 minutes, until the edges are lightly golden and the centers look slightly underbaked.
  8. Cool: Let the cookies cool on the baking tray for 5 minutes before transferring to a wire rack to cool completely.

Fun Flavor Twists

Once you make these cookies, you’ll want to experiment with fun variations. The peanut butter base pairs well with lots of different mix-ins.

  • Peanut Butter Cup Cookies: Swap half the chocolate chips for chopped peanut butter cups.
  • Trail Mix Cookies: Add raisins, chopped almonds, and sunflower seeds for a trail mix-inspired cookie.
  • Nutella Hazelnut: Use Nutella instead of peanut butter and chopped hazelnuts.
  • Banana Peanut Butter Cookies: Mix in ¼ cup mashed ripe banana for a subtle banana bread twist.
  • Coconut Chocolate Chip: Add ½ cup shredded coconut for extra texture and sweetness.

Gluten-Free Peanut Butter Oatmeal Chocolate Chip CookiesHelpful Hints

A few simple tips will help ensure these cookies turn out perfectly every time.

  • Use room temperature butter: This helps the dough cream properly and creates a lighter cookie texture.
  • Don’t Overbake: The centers should look slightly underdone when you remove them from the oven; they’ll finish setting as they cool.
  • Use a large cookie scoop: A 3-tablespoon scoop creates thick, bakery-style cookies.
  • Space the cookies well: Leave about 3 inches between scoops so they can spread evenly.
  • Chop the peanuts finely: Smaller pieces distribute better through the dough and prevent cookies from breaking apart.
