Gluten-Free Lemon Pound Cake Ingredients & Substitutions
This recipe uses pantry staples with a fresh citrus twist. Each ingredient plays an important role and includes easy swap options:
- Granulated Sugar: Sweetens the cake and helps create a light texture. Organic cane sugar is a fabulous swap.
- Lemon Zest: Adds bold citrus flavor (no substitute, but orange zest can be used for a twist.)
- Salted Butter: Provides richness and structure. You can use plant-based butter for a plant-based option.
- Sour Cream: Keeps the cake moist and tender. Swap with dairy-free sour cream or thick coconut yogurt.
- Applesauce: Adds moisture and helps bind. If you are not plant-based or egg-free, you can replace the applesauce with 1 large room-temperature egg.
- Lemon Juice: Enhances the bright flavor. Fresh is best, but bottled works.
- Vanilla Extract: Rounds out the flavor.
- Gluten-Free Flour 1:1 Blend: Gives structure. Make sure your blend contains xxatham gum. If you are not gluten-free, you can use regular all-purpose flour.
- Baking Powder: Helps the cake rise.
- Sea Salt: Enhances flavor. Table salt works in a pinch; use slightly less, though.

- In a small mixing bowl, combine the powdered sugar, lemon juice, and a pinch of salt and whisk until fully combined and smooth. Pour over the fully cooled lemon pound cake.
- Serve as is, with a scoop of ice cream, or a dollop of whipped cream and fresh berries. Enjoy!
