The Best Triple Chocolate Chip Cookies
If you love a thick, chewy, bakery-style cookie packed with chocolate in every bite, this recipe is for you. The combination of three different chocolate chips creates incredible depth of flavor, while the cornstarch and chill time ensure a soft, tender center. These cookies bake up beautifully every time and are easy to adapt for gluten-free or dairy-free baking.
- Triple Chocolate Goodness: Milk, dark, and white chocolate chips create layers of sweetness and richness.
- Thick & Chewy Texture: Cornstarch and a long chill time help create soft centers and golden edges.
- Bakery-Style Size: A large scoop keeps them tall, thick, and impressive.
- Gluten-Free Option: A 1:1 gluten-free flour blend works seamlessly in this recipe.
- Dairy-Free Friendly: Simple swaps make these cookies completely dairy-free without affecting texture.

Triple Chocolate Chip Cookie Ingredients & Substitutions
Each ingredient works together to create structure, chewiness, and rich chocolate flavor. Simple swaps make this recipe flexible for different dietary needs.
- All-purpose flour: Provides structure and chew. Substitute with a 1:1 gluten-free flour blend for gluten-free cookies.
- Cornstarch: Creates softness and thickness. Arrowroot powder can be used as a substitute or you can swap it with more flour.
- Baking soda: Helps the cookies rise and spread properly. No direct substitute recommended for best results.
- Salted butter: Adds richness and flavor. Use a dairy-free baking block for dairy-free cookies.
- Brown sugar: Adds moisture and chew. Dark or light brown sugar both work. Coconut sugar can be used for a slightly deeper flavor.
- Granulated sugar: Contributes to the spread and crisp edges. Organic cane sugar works well as a substitute.
- Egg + egg yolk: Adds structure and richness. For egg-free, use a flax egg for the whole egg and 1 tablespoon dairy-free yogurt or sour cream for the yolk (texture may vary slightly).
- Pure vanilla extract: Enhances overall flavor. Vanilla bean paste can be substituted.
- Milk chocolate chips: Add creamy sweetness. Use dairy-free milk-style chips if needed.
- Dark chocolate chips: Provide rich depth. Semi-sweet chips can be substituted as well as dairy-free dark chocolate chips.
- White chocolate chips: Add contrast and sweetness. Use dairy-free white chocolate chips if needed.

Triple Chocolate Chip Cookies Step-by-Step Instructions
Following these steps carefully, especially the chill time, will give you thick, bakery-style cookies with soft centers and perfect edges.
- Cream butter and sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 2 minutes.
- Add eggs and vanilla: Mix in the egg, egg yolk, and vanilla extract until fully combined and smooth.
- Add dry ingredients: Add the flour, cornstarch, baking soda, and salt. Mix until a soft dough forms. Do not overmix.
- Fold in chocolate chips: Gently stir in the milk, dark, and white chocolate chips until evenly distributed.
- Chill the dough: Cover with plastic wrap and chill in the refrigerator for at least 2 hours. Overnight chilling is highly recommended for the best flavor and thickness.
- Preheat and prepare: Preheat the oven to 350°F and line two large baking sheets with parchment paper.
- Scoop the dough: Using a large 3-tablespoon cookie scoop, place dough balls 3 inches apart. Keep them tall and round; do not flatten.
- Bake: Bake for 12–13 minutes, until the edges are lightly golden and the centers appear slightly underbaked.
- Cool: Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.
- Store: Store in an airtight container at room temperature for up to 3 days, 5 days in the fridge, or freeze for up to 3 months.

Triple Chocolate Chip Cookie Helpful Hints
Small technique details make a big difference in achieving thick, chewy cookies with perfectly soft centers. Paying attention to mixing time, chill time, and bake time will ensure consistent results every time you make them.
- Chill for Thickness: Longer chill time prevents spreading and enhances flavor.
- Keep Dough Balls Tall: Do not flatten before baking; this keeps the centers soft and thick.
- Slightly Underbake: Remove when centers look slightly soft; they’ll finish setting as they cool.
- Measure Flour Properly: Spoon and level flour to avoid dense cookies.
- Add Extra Chips on Top: Press additional chocolate chips into the tops before baking for a bakery-style finish.

Chocolate Chip Cookie Fun Flavor Twists
This cookie dough is a perfect base for experimenting with flavor combinations while keeping that thick, chewy texture.
- Espresso Boost: Add 1 teaspoon espresso powder to deepen the chocolate flavor.
- Nutty Crunch: Fold in chopped walnuts or pecans.
- Holiday Version: Swap white chocolate chips for peppermint chips.
- Spicy Chocolate: Add a small pinch of cayenne for a subtle kick.
