Gluten-Free Oreo Cake Ingredients & Substitutions

This recipe uses straightforward ingredients with easy substitutions to suit your needs. Pay close attention if you need dairy-free options.

Oreo Cake

  • Gluten-Free Flour 1:1 Baking Blend: Provides structure and a balanced crumb; be sure it includes xanthan gum. If gluten is not a concern, use regular cake flour.
  • Baking Powder: Helps the cake rise and keeps it light.
  • Fine Sea Salt: Balances the sweetness and enhances flavor.
  • Granulated Sugar: Sweetens the cake and contributes to moisture. You can swap with organic cane sugar if desired.
  • Sour Cream: Adds richness and tenderness. Full-fat is always best, and you can use dairy-free sour cream if needed. Mayonnaise or Greek yogurt will work in a pinch, too.
  • Vegetable Oil: Keeps the cake moist and soft for days. Any neutral-tasting oil will work, as will melted butter or fractionated coconut oil.
  • Eggs: Bind the batter and provide structure. A liquid egg substitute, such as Just Egg, will work, but the texture will be denser.
  • Vanilla Extract: Adds warmth and depth of flavor.
  • Milk: Adds moisture. Use regular or plant-based milk, and again, the higher the fat content, the better.
  • Gluten-Free Oreos: Chopped for the cake and finely crushed for the frosting. If you are not gluten-free, use regular Oreos. No-name brand chocolate sandwich cookies also work great.

Oreo Buttercream

  • Salted Butter: Forms the base of the frosting. Use dairy-free butter sticks if needed, but note that they have to be in brick form.
  • Powdered Sugar: Sweetens and stabilizes the buttercream.
  • Gluten-Free Oreos: Adds cookies-and-cream flavor throughout.
  • Vanilla Extract & Salt: Balance sweetness and enhance flavor.

Chocolate Ganache Filling

  • Chocolate Chips: Use regular or dairy-free chocolate. I love to use Pascha.
  • Heavy Cream: Regular or dairy-free alternative for a smooth drip. Coconut cream will do the job too.

Gluten-Free Oreo Cake Step-by-Step Instructions

This cake comes together easily with a simple mixing method and bakes up beautifully every time. Pre-heat the oven, grab a spatula, and let’s bake a gluten-free Oreo cake.

Oreo Cake

  1. Prep: Preheat the oven to 350°F and prepare two 8-inch round cake pans with non-stick spray and parchment paper.
  2. Mix dry ingredients: Whisk together the gluten-free flour, baking powder, and salt in a small bowl and set aside.
  3. Mix wet ingredients: In a medium bowl, whisk together the sugar, sour cream, oil, eggs, and vanilla until smooth.
  4. Combine: Add half of the dry ingredients to the wet mixture and mix, followed by half of the milk. Repeat with the remaining dry ingredients and milk, mixing until just combined.
  5. Add Oreos: Gently fold in the chopped gluten-free Oreos.
  6. Bake: Divide the batter evenly between the prepared pans and bake for 30–35 minutes, until the edges are lightly golden and a toothpick inserted comes out with a few moist crumbs.
  7. Cool: Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Oreo Buttercream

  1. Beat butter: In a stand mixer fitted with the paddle attachment, beat the butter on high speed for about 5-10 minutes until light and fluffy.
  2. Add remaining ingredients: Add the powdered sugar, crushed Oreos, vanilla, and salt. Mix on low until combined.
  3. Whip: Increase the speed to high and beat for 5 minutes until smooth and fluffy, scraping down the bowl as needed.

Chocolate Ganache Filling

  1. Heat: In a microwave-safe bowl, heat the cream in 30-second intervals, stirring between each, until hot and bubbling slightly around the edges.
  2. Pour over chocolate: Pour the hot heavy cream over the chocolate chips and allow to sit for 2 minutes. Gently whisk together until fully melted and smooth.
  3. Adjust consistency: If the ganache is too thin, add more chocolate; if too thick, add a small splash of cream.
  4. Cool: Let the ganache cool until it reaches room temperature before using.

Cake Assembly

  1. Layer: Slice each cake layer in half if desired. Place one layer on a cake board or plate and top with about 1 cup of buttercream.
  2. Filling: Pipe a buttercream border around the edge of the cake and fill with approximately ⅓ of the ganache, and spread evenly.
  3. Crumb coat: Repeat with remaining layers, then apply a thin crumb coat around the entire cake. Chill for 20 minutes.
  4. Final coat: Apply the final layer of buttercream, smoothing the sides and top. Chill for another 10 minutes.
  5. Decorate: Pipe buttercream swirls on top using a Wilton 1M tip and finish with gluten-free Oreos.

Oreo Gluten-Free Cake Helpful Hints

These tips will help ensure bakery-style results every time. Remember to go slow and that the fridge is always your friend when stacking, frosting, and decorating a layer cake.

  • Room Temperature Ingredients: Don’t skip this. It helps everything mix smoothly and evenly.
  • Don’t Overmix: Mix just until combined to keep the cake tender.
  • Chill Between Steps: Chilling helps stabilize the cake and makes decorating easier.
  • Buttercream Border: Make sure to pipe a buttercream border between each layer before filling with chocolate ganache, or else you will end up with a leaky, unstable cake.

Fun Flavor Oreo Cake Twists

This cake is easy to customize while keeping the Oreo base front and center. I would love to hear if you try one of these flavors.

  • Mint Oreo Style: Add ½ teaspoon peppermint extract to the buttercream. You could even use gluten-free mint Oreos if you find them in the store. Here’s a similar cookie that would work.
  • Chocolate Cake Base: Replace ½ cup of flour with cocoa powder for a chocolate Oreo cake.
  • Peanut Butter: Add 1 cup of smooth, no-stir peanut butter to the buttercream for a yummy peanut butter Oreo cake twist.
  • Cookies & Cream Cupcakes: Use the batter to make cupcakes and top with Oreo buttercream.

Instructions

Oreo Cake

  1. Preheat the oven to 350ºF and prepare two 8-inch round cake pans with non-stick baking spray and parchment paper.
  2. In a small mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a medium mixing bowl, whisk together the sugar, sour cream, oil, egg, and vanilla until smooth.
  4. Add half of the dry ingredients and mix, followed by half of the milk and mix.
  5. Add the remaining half of the dry ingredients and again, the remaining half of the milk mixture, and mix until just combined. It’s okay if there are a few lumps in the batter. Gently fold in the chopped Oreos.
  6. Divide the batter into the prepared cake pans and bake for approximately 30-35 minutes. The edges of the cakes should be light golden brown and slightly pulled away from the cake pan. A toothpick inserted in the middle should come out with a few moist crumbs.
  7. Allow the cakes to cool in the pan for 10 minutes before removing to a wire rack to fully cool.

Oreo Buttercream

  1. In the bowl of a stand mixer with the paddle attachment, beat the butter on high speed until light and fluffy. Approximately 5-10 minutes.
  2. Add in the powdered sugar, Oreo crumbs, salt, and vanilla extract and mix on low until combined.
  3. Turn the mixer up to high and let mix for 5 minutes until smooth and fluffy. Scrape the sides of the bowl when necessary.

Chocolate Ganache Filling

  1. In a microwave-safe bowl, heat the heavy cream in 30-second intervals, stirring after each interval, until fully hot and bubbly around the edges. This can be done stovetop as well, over medium-high heat.
  2. Pour the hot cream over the chocolate chips and allow to sit for 2 minutes. Gently stir until smooth and fully combined.
  3. Allow to cool to room temperature before using.

Cake Assembly

  1. Slice each cake layer in half (optional) and place one layer on a cake board, plate, and/or cake turntable and top with approximately 1 cup of frosting.
  2. Pipe a buttercream border around the edge of the cake layer and fill with approximately ⅓ of the chocolate ganache.
  3. Repeat with the remaining layers and gently apply a thin coat of buttercream around the entire cake. Chill the cake for 20 minutes. *If the cake feels unstable or the buttercream becomes too soft at any point while stacking, stop and chill the cake and frosting for 15 minutes.
  4. Spread a final layer of buttercream on the cake and smooth the sides and top with a cake smoother and offset spatula. Chill in the fridge for another 10 minutes.
  5. Fit a piping bag with a Wilton 1m piping tip and pipe swirls on top of the cake. Place an Oreo cookie between each swirl. Enjoy!
  6. Store leftover cake in an airtight container at room temperature for up to 2 days, in the fridge for up to 5 days, or in the freezer for up to 3 months.
