The Best Toffee Rum Cookies
These toffee rum cookies are incredibly soft and chewy, with buttery centers and crisp, sparkly edges. The warm rum flavor blends seamlessly with sweet toffee bits, giving each cookie a rich, cozy sweetness that feels perfect for the holidays. They’re the kind of cookie that disappears fast because everyone reaches for “just one more.” Here’s why you’ll love them:
- Cozy Holiday Flavor: The combination of toffee and rum creates a warm, caramel-like sweetness that feels festive and comforting.
- Soft & Buttery: Tender shortbread-style dough that practically melts in your mouth.
- Make-Ahead Magic: The dough freezes beautifully, so you can bake fresh cookies anytime.
- Adaptable Recipe: Simple ingredient swaps allow you to make them gluten-free or dairy-free without losing their signature texture.

Ingredients & Substitutions For Toffee Rum Cookies
This section breaks down what each ingredient does so you know exactly why it’s included and how it affects the final cookie. It also explains the best swaps so you can adapt the recipe to your preferences or dietary needs, so pay close attention if you are gluten-free and/or dairy-free.
- All-Purpose Flour – Creates the structure without making the cookies cakey. Swap with a gluten-free 1:1 baking blend for a GF variation.
- Cornstarch: Adds tenderness and helps the cookies hold shape. You can substitute with arrowroot powder or tapioca starch.
- Salt: Balances sweetness and enhances flavor.
- Granulated Sugar: Sweetens and gives golden edges. Coconut sugar will work for a less refined option (cookies will be slightly darker). Monk fruit or organic cane sugar can be used as well.
- Salted Butter: Brings buttery richness and structure. Swap with vegan butter or coconut oil for a dairy-free version.
- Milk: Softens the dough for a smooth texture. Use any kind of milk.
- Rum or Rum Extract – Gives the cookies a warm, aromatic flavor that beautifully complements the toffee. Extract works well if you prefer an alcohol free cookie.
- Fine Sea Salt – Balances sweetness and enhances the rich toffee and rum notes.
- Toffee Bits – Add sweet, buttery crunch with little caramel bursts throughout. Dairy-free toffee bits work for a fully DF version.
- Sparkly Sugar Sprinkles (Optional) – Adds an extra dash of elegance to the cookies, but is totally optional.

Toffee Rum Cookies Step-by-Step Instructions
These instructions walk you through the baking process so you’ll know exactly what each step should look like. They’re straightforward, simple, and ensure consistently perfect cookies every time.
- Prep: Preheat the oven to 350°F and line two cookie sheets with parchment paper.
- Cream butter and sugar: In a stand mixer or large bowl, beat butter and sugar on high until light and fluffy, about 2 minutes.
- Add milk and extracts: Pour in milk and rum (or rum extract) and mix until combined.
- Add dry ingredients: Mix in the flour, cornstarch, and salt on low speed until a dough starts to form. Gently fold in the toffee bits.
- Shape the dough: Scoop 1.5-tablespoon portions and roll into smooth balls. Ensure there are no cracks — this helps prevent cracking while baking.
- Create the fork marks: Use the back of a fork to gently but firmly press the indent into the top of each cookie.
- Bake: Bake for 8–10 minutes, or until edges are just set.
- Cool: Let cookies cool fully on the baking sheet before serving or storing.

Fun Flavor Twists
These variations allow you to customize your cookies while still keeping the base recipe simple and approachable. Whether you’re looking for deeper caramel notes or something more festive, these ideas add a fun spin.
- Brown Butter Toffee: Brown the butter first for a richer, nutty caramel flavor.
- Espresso Rum Cookies: Add ½ teaspoon espresso powder for a subtle mocha kick.
- Spiced Rum Sugar Cookies: Mix in a little cinnamon or nutmeg for holiday spice.
- Chocolate-Dipped: Once cooled, dip half the cookie in melted dark chocolate.

Rum Cookies Helpful Hints
These small tips make a big difference when it comes to bakery-style cookies. They help with texture, flavor, and consistency every single time you bake them.
- Cream Properly: Fully whipping the butter and sugar ensures soft, even cookies.
- Room Temperature: Make sure all your ingredients are at room temperature for even mixing.
- Don’t Overbake: Remove the cookies when the centers still look slightly underdone for optimal melt-in-your-mouth texture and chewiness.
- Avoid cracks: Roll the dough smoothly without seams for flawless edges.
- Choose Reliable Swaps: A high-quality GF 1:1 flour blend with xanthan gum gives the best gluten-free results.

Description
These toffee rum cookies are soft, chewy, and packed with rich toffee flavor and a warm hint of rum. They’re easy to make and can be adapted to be fully gluten-free and dairy-free without losing their buttery texture or sweet, cozy taste. Perfect for holiday baking or anytime you want a fun twist on classic shortbread cookies.
Ingredients
- 3/4 cup (170g) salted butter, room temperature *regular or plant-based
- 1/2 cup (100g) granulated sugar
- 2 tablespoons (30ml) milk, room temperature *regular or plant-based
- 2 teaspoons rum or rum extract
- 2 cups (240g) all-purpose flour *can sub gluten-free flour 1:1 baking blend
- 2 teaspoons (5g) cornstarch
- 1/2 teaspoon salt
- 1/3 cup (57g) toffee bits *regular or plant-based
- optional: sparkly sugar sprinkles for decor
Instructions
- In a stand mixer or large mixing bowl with an electric mixer, combine the butter and sugar and beat on high until light and fluffy. This should take approximately 2 minutes.
- Add in the milk and rum (or rum extract) and mix until fully combined.
- Measure in the flour, cornstarch, and salt, and mix on low until a dough forms. Gently fold in the toffee bits.
- With a small 1.5 tablespoon cookie scoop or spoon, portion the dough and roll into balls (you want the dough to be round with no seams or cracks; this will prevent the cookies from cracking when baked).
- Place onto the prepared cookie sheets approximately 2 inches apart. With the back of a fork, gently press an indentation into the center of each cookie dough ball. If the fork prongs are sticking to the cookie dough, dip them lightly in powdered sugar.
- Bake for approximately 8-10 minutes or until the edges are just set and the center appears slightly underbaked. Overbaking will result in dry cookies. Remove from the oven and top with sparkly sugar sprinkles if desired. Allow to cool fully on the cookie sheet. Enjoy!
- Store leftover toffee rum cookies in an airtight container at room temperature for up to 5 days or frozen for up to 3 months.
