The Best Maple Brown Sugar Cookies

Warm, sweet, and melt-in-your-mouth soft — these cookies are everything you love about brown sugar cookies, elevated with the deep, cozy flavor of pure maple syrup. Here’s why you’ll love them:

  • Rich Maple Flavor: Real maple syrup and maple extract make every bite taste like fall.
  • Perfectly Soft Texture: Buttery, tender centers with lightly crisp edges.
  • Simple to Make: No chilling, no fancy steps — just mix, scoop, and bake.
  • Customizable: Includes gluten-free and dairy-free options that taste just as good as the classic.

Maple Brown Sugar Cookies Ingredients & Substitutions

Here’s a quick look at what makes these cookies so soft and flavorful, plus a few simple swaps:

  • Salted Butter: Creates a rich, tender texture. Use a dairy-free stick butter substitute for a plant-based version. I personally love to bake with Becel plant-based bricks.
  • Brown Sugar: Adds sweetness and that signature chewy texture with caramel depth. You can use a sugar-free version such as Swerve.
  • Egg: Helps bind the dough and adds structure. For a vegan option, replace with a flax egg (1 tablespoon ground flaxseed mixed with 2½ tablespoons warm water, rested for 5 minutes).
  • Pure Maple Syrup: Brings authentic maple flavor — use Grade A for a lighter taste or Grade B for a stronger flavor.
  • Maple Extract: Boosts the maple flavor; swap with vanilla extract if needed.
  • All-Purpose Flour: The base for structure. Use a gluten-free 1:1 baking blend if you are gluten-free. I made these cookies with Primal Palate.
  • Cornstarch: Keeps the cookies soft and prevents spreading too much.
  • Baking Soda: Helps the cookies rise slightly and stay chewy.
  • Fine Sea Salt: Balances sweetness and enhances flavor.
  • Optional Cinnamon Sugar: Rolling the dough balls in this mix gives a sweet, spiced crust.
  • Optional Sparkly Sprinkles: Adds a little bit of extra personality.

Step-by-Step Instructions

These cookies come together in under 30 minutes — perfect for quick baking days. Turn on the oven and grab a spatula. Let’s get to baking!

  1. Prep: Preheat the oven to 350°F and line a large baking sheet with parchment paper.
  2. Cream butter and sugar: Beat the butter and brown sugar together on high speed until light and fluffy (about 2 minutes).
  3. Add wet ingredients: Mix in the egg, maple syrup, and maple extract (or vanilla). Scrape down the bowl as needed.
  4. Mix dry ingredients: Add flour, cornstarch, baking soda, and salt. Mix on low until a dough forms.
  5. Scoop and roll: Use a 1.5-tablespoon scoop to portion the dough. Roll in cinnamon sugar if desired.
  6. Bake: Arrange cookies 2 inches apart and bake for 10–12 minutes. The edges should be set and the centers slightly underbaked.
  7. Cool: Let cookies rest for 5 minutes on the tray, then transfer to a wire rack to cool completely.
  8. Icing: Combine the icing ingredients in a small mixing bowl until smooth.
  9. Decorate: Pipe or drizzle the icing over the fully cooled cookies and, if desired, top with sparkly sugar.

Brown Sugar Maple Cookies Helpful Hints

A few small tips can make a big difference in getting that perfect texture and maple flavor.

  • Don’t overbake: The centers should still look soft when you remove them from the oven — they’ll set as they cool.
  • Room temperature ingredients: This helps everything mix evenly for a smooth dough.
  • Use real maple syrup: Artificial syrup won’t have the same deep flavor.
  • Make ahead: The dough freezes beautifully. Just scoop and freeze, then bake from frozen with an extra minute or two.

Fun Flavor Twists

If you’re in the mood to mix things up, try one of these cozy cookie variations.

  • Pecan Maple Crunch: Add ½ cup chopped toasted pecans to the dough.
  • Iced Maple Cookies: Drizzle with a simple maple glaze (powdered sugar + maple syrup).
  • Salted Caramel Maple: Add a caramel drizzle and a pinch of flaky salt after baking.
  • Pumpkin Spice Maple: Add ½ teaspoon pumpkin pie spice to the dough for a fall twist.
