These aren’t just any s’mores cookies—every bite is loaded with gooey marshmallow, rich chocolate, and crunchy toffee. They’re everything you love about a campfire treat in one perfectly chewy cookie.
- Gooey marshmallow centers: Every bite has soft, melty marshmallow goodness.

- Perfect texture: Crisp edges with soft, chewy middles.
- Easy to customize: Simple swaps make them gluten-free or dairy-free without sacrificing flavor.

Toffee S’Mores Cookies Ingredients & Substitutions
Every ingredient plays a part in building that perfect s’mores flavor and texture. Here’s what you’ll need and how to easily make these cookies gluten-free or dairy-free.
- Salted butter: Use regular or dairy-free butter for the same rich flavor.
- Brown sugar + granulated sugar: Creates chewy centers with crisp edges.
- Egg: Adds structure and moisture—use room temperature for best mixing. Swap with a flax egg (1 tbsp ground flax + 3 tbsp warm water) for an egg-free alternative.
- Vanilla extract: Brings out warm, sweet flavors. Pure vanilla extract is best, but imitation will work as well.
- All-purpose flour: Use your favorite 1:1 gluten-free blend that contains xanthan gum for an easy gluten-free swap. I love baking with XO Baking.
- Coarse sea salt: Balances the sweetness beautifully. You can use regular kosher salt.
- Baking soda: Helps the cookies rise just enough.
- Mini marshmallows: Classic s’mores gooeyness—look for plant-based if needed.
- Chopped graham crackers: Use regular or gluten-free graham crackers for crunch. Digestive biscuits, golden Oreos, or any vanilla wafer-type cookie/cracker will work.
- Chocolate chunks: Regular or dairy-free chunks or chips both work.
- Toffee bits: Adds buttery caramel flavor—choose dairy-free to suit your needs.
