Ingredient Swaps & Substitutions

These cookie dough brownies are made with simple pantry staples, but every ingredient plays a key role. Here’s what you need and how you can tweak it to suit your preferences or dietary needs:

  • Brownie Mix – Use your favorite boxed brownie mix. Gluten-free blends work perfectly here, too.
  • Vegetable Oil – Any neutral-tasting oil will work, as will melted butter. For a lighter option, try unsweetened applesauce (though the texture will be slightly cakier).
  • Hot Coffee – Use hot milk or even just hot water if you prefer, but coffee gives that bakery-style depth.
  • Egg – Recipe uses 1 large egg, but you can use a flax egg (1 tbsp ground flax + 3 tbsp water) or a store-bought egg replacer for a vegan version.
  • Brown Sugar – Can be substituted with coconut sugar.
  • Butter – Any type of butter (lactose-free, vegan, etc) works well here.
  • Heat-Treated Flour – Use all-purpose flour or a 1:1 gluten-free baking blend. Just make sure it’s been heat-treated first (baked or microwaved to kill bacteria).
  • Mini Chocolate Chips – Whatever style of chocolate chip you prefer will work. I like mini as it gives a fabulous chip-to-bite ratio.
  • Milk – Any type of milk works. Regular, 2%, almond, oat, or soy milk are all great choices.

How to Heat Treat Flour

Since this recipe includes edible cookie dough, it’s important to heat treat your flour before using it to kill any potential bacteria. It’s super easy to do at home!

Oven Method

  1. Preheat your oven to 300ºF (150ºC).
  2. Spread flour evenly on a baking sheet.
  3. Bake for 5–7 minutes, stirring halfway through, until it reaches 160ºF (71ºC).
  4. Let it cool completely before using.

Microwave Method

  1. Place flour in a microwave-safe bowl.
  2. Heat in 30-second intervals, stirring in between, for about 1½ to 2 minutes total.
  3. Use a thermometer to check—it should reach 160ºF (71ºC) throughout.

*Helpful Tip: Sift the flour after heat-treating if it clumps up!

How to Make Cookie Dough Brownies

These decadent edible cookie dough brownies are super simple to make—just a few steps and no mixer required for the brownie base!

  • Prep the pan: Line an 8×8-inch pan with parchment paper and a spritz of non-stick spray.
  • Make the brownie batter: Mix brownie mix, oil, hot coffee, and egg until smooth. Pour into the pan.
  • Mix the cookie dough: Cream butter, brown sugar, and vanilla, then mix in the flour and salt until dough forms.
  • Add dough to batter: Roll 16 mini cookie dough balls and press them evenly into the brownie batter.
  • Bake: Bake at 350°F for 30–35 minutes, until a toothpick comes out with fudgy crumbs.
  • Top it off: Let brownies cool completely. Stir milk into the remaining cookie dough until spreadable, then slather it on top. Add cookie crumbs if you like!

Helpful Tips & Tricks

Before you dive in, here are a few simple tips to make sure your cookie dough brownies turn out perfectly every time.

  • Chill before slicing: For clean cuts, refrigerate the brownies for 30–60 minutes before serving.
  • Don’t overbake: Look for fudgy crumbs on the toothpick—overbaking will dry them out.
  • Use parchment paper: It makes lifting and cutting the brownies so much easier (and cleaner!).

Cookie Dough Brownie Fun Flavor Twists

Want to take it up a notch? Try one of these easy swaps:

  • Salted caramel swirl: Add a drizzle of caramel sauce before baking.
  • Peanut butter cookie dough: Swap 2 tbsp butter for peanut butter in the dough.
  • Cookies & cream: Use chopped Oreos in place of chocolate chips and on top.
  • Mocha vibes: Add ½ tsp instant espresso to the cookie dough for a coffee-kissed boost.

How to Store Brownies with Cookie Dough

Store leftover brownies in an airtight container at room temperature for up to 5 days, or pop them in the freezer for up to 3 months. Thaw at room temp or enjoy chilled straight from the fridge—either way, delicious!
