- Preheat oven to 350ºF. Prep two 8-inch round cake pans with baking spray and parchment circles.
- In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a medium bowl, whisk together sugar, sour cream, oil, eggs, and vanilla until smooth.
- Stir in half the dry mixture, followed by half the milk. Repeat with remaining dry and wet ingredients. Don’t overmix — a few lumps are fine!
- Divide the batter evenly between the prepared pans.
- Bake for 30–35 minutes. Cakes are done when edges are golden, slightly pulled away, and a toothpick comes out with a few moist crumbs.
- Cool in pans for 10 minutes, then transfer to wire racks to fully cool.
For the Chocolate Buttercream
- In a stand mixer (or using electric beaters), beat butter on high until super light and fluffy — about 5–10 minutes.

- Increase speed to high and beat for another 5 minutes until smooth, soft, and fluffy.
Cake Assembly
- Level your fully cooled cake layers with a knife or leveler if needed. (They usually bake quite flat!)
- Place one layer on a cake board or turntable. Spread approximately 2 cups of buttercream evenly over the top.
- Add the second layer and apply a thin crumb coat of buttercream to the entire cake.
- Chill the cake for 10–20 minutes to set.
- Cover with the final layer of buttercream. Smooth with an offset spatula or cake scraper.
- Decorate as you please! I placed golden Oreos on the top of the cake, piped swirls in between each cookie with a Wilton 1M tip, and finished with fun sprinkles around the top and bottom.

Ingredients
Vanilla Cake
- 2 1/2 cups (3o0g) flour *cake flour or gluten-free 1:1 baking blend
- 1 tablespoon (14g) baking powder
- 1 teaspoon fine sea salt
- 2 cups (400g) granulated sugar
- 1 cup (240ml) sour cream, room temperature *regular or plant-based
- 1/2 cup (120ml) vegetable oil
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 cup (240ml) milk, room temperature *regular or plant-based
Chocolate Frosting
- 2 cups (454g) salted butter, room temperature *regular or plant-based
- 3 1/2 cups (420g) powdered sugar
- 1/2 cup (44g) cocoa powder
- 1 teaspoon fine sea salt
- optional: cookies and sprinkles for decor
Instructions
Vanilla Cake
- Preheat the oven to 350ºF and prepare two 8-inch round cake pans with non-stick baking spray and parchment paper.
- In a small mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a medium mixing bowl, whisk together the sugar, sour cream, oil, egg, and vanilla until smooth.
- Add half of the dry ingredients and mix, followed by half of the milk and mix.
- Add the remaining half of the dry ingredients and again, the remaining half of the milk mixture, and mix until just combined. It’s okay if there are a few lumps in the batter.
- Divide the batter into the prepared cake pans and bake for approximately 30-35 minutes. The edges of the cakes should be light golden brown and slightly pulled away from the cake pan. A toothpick inserted in the middle should come out with a few moist crumbs.
- Allow the cakes to cool in the pan for 10 minutes before removing to a wire rack to fully cool.
Chocolate Frosting
- In a stand mixer or large mixing bowl with electric beaters, cream the butter on high speed until light and fluffy. This will take approximately 5-10 minutes.
- Add the powdered sugar, cocoa powder, and salt and mix on low until combined.
- Turn the mixer up to high and allow to beat for 5 minutes until light and fluffy.
Cake Assembly
- Level each fully cooled yellow cake layer with a cake leveler or knife if needed. *The layers should bake flat, though.
- Place one leveled layer of cake on a cake board, plate, and/or cake turntable and top with approximately 2 cups of chocolate buttercream.
- Top with the remaining cake layer and very gently apply a thin coat of buttercream to the entire cake. Chill the cake for 10-20 minutes. *If the cake feels unstable or the buttercream becomes too soft at any point while stacking, stop and chill the cake and frosting for 15 minutes.

Cover the cake with a final layer of buttercream and smooth the sides with a cake smoother and/or offset spatula.

Decorate the cake as you please. I placed golden Oreos around the top of the cake, piped Wilton 1m swirls between each cookie, and applied sprinkles to the top and bottom. Enjoy!
