Gluten-Free Rice Krispie Treats

  • 1/2 cup (114g) butter, *regular or plant-based
  • 10 cups (450g) mini marshmallows, divided (8 cups & 2 cups) *regular or plant-based
  • 6 cups (200g) gluten-free rice cereal
  • 1 teaspoon coarse sea salt
  • optional: 1/4 cup sprinkles

Instructions

  1. Prepare a 9×13-inch baking pan with non-stick baking spray and parchment paper.
  2. In a large microwave-safe bowl, combine the butter and 8 cups of mini marshmallows and cook on high heat for 1 minute. Remove from the microwave and gently stir.
  3. Heat the butter and marshmallow mixture for one more minute in the microwave. Remove from the microwave and stir gently until completely melted.
  4. Add the rice cereal and salt, and gently stir until well combined. Allow the mixture to cool for 1 minute.
  5. Gently fold in the remaining 2 cups of mini marshmallows and sprinkles, if using, and mix until just combined.
  6. Place the mixture into the prepared pan and very gently pat it down into the pan. (Don’t handle it too much or else they will be hard.)
  7. Allow to fully cool and set before slicing. Enjoy!
  8. Store leftover treats in an airtight container at room temperature for up to 7 days or frozen for up to 6 months.
