  • Granulated sugar – Sweetness to balance the tart. You can replace this with organic cane sugar or monkfruit.
  • Vegetable oil – Any neutral-tasting oil will work.
  • Sour cream – Regular or dairy-free both work great. The higher the fat content the better.
  • Lemon zest & juice – Fresh is best whenever possible.
  • Raspberries – Fresh or frozen. Tossed with a bit of flour to prevent sinking. If using frozen, do not thaw.

Lemon Raspberry Bundt Cake

  • 2 cups (240g) flour *all-purpose or gluten-free 1:1 baking blend
  • 1 box (99g/3.4oz) instant lemon pudding mix
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon fine sea salt
  • 3 large eggs, room temperature
  • 1 1/2 (300g) cups granulated sugar
  • 1 cup (240ml) sour cream, at room temperature *regular or dairy-free
  • 1/2 cup (120ml) vegetable oil
  • 1/4 cup (60ml) lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 2 cups (250g) raspberries, fresh or frozen
  • 3 tablespoons flour *all-purpose or gluten-free 1:1 baking blend

Raspberry Glaze

  • 1 cup (120g) powdered sugar
  • 2/3 cup (85g) raspberries, fresh or frozen
  • 12 teaspoons lemon juice
  • pinch of fine sea salt
  • optional: raspberries & lemons for decor

Instructions

Lemon Raspberry Bundt Cake

  1. Preheat the oven to 325°F and prepare a 10-cup bundt pan with a generous amount of non-stick baking spray or butter. Set aside.
  2. In a large mixing bowl, combine the eggs, sugar, oil, sour cream, lemon juice, lemon zest, and vanilla and whisk until smooth.
  3. Measure in the flour, lemon pudding mix, baking powder, and salt and whisk until combined.
  4. Combine the raspberries with 3 tablespoons of flour and gently fold them into the cake batter.
  5. Pour the batter into the prepared bundt pan and spread evenly. Gently tap the pan on the counter and bake for approximately 60 minutes or until a toothpick inserted in the middle comes out with a few moist crumbs or the internal temperature reaches 200ºF.
  6. Allow the cake to cool in the pan for 10 minutes before inverting on a wire rack to fully cool.

Raspberry Glaze

  1. In a small mixing bowl, mash the raspberries. Strain the seeds out if desired.
  2. Add the powdered sugar and salt and mix until combined. Pour in the lemon juice 1 teaspoon at a time until the desired consistency is achieved.
  3. Pour evenly over the top of the fully cooled bundt cake and top with fresh raspberries and lemon slices. Enjoy!
