Gluten-Free Lemon Blueberry Bars: Ingredients & Substitutions
As always, this recipe is written as gluten-free and dairy-free. That said, I test each recipe with regular ingredients and make notes of alternatives or swaps so that everyone can enjoy it.
Here are a few key ingredients for these dairy-free and gluten-free lemon blueberry bars, but make sure you scroll to the bottom recipe card for the complete ingredient list.
Butter – Becel plant-based bricks are my personal favorite for baking, but any brick-style dairy-free, vegan, lactose-free, or regular butter will work.
Sugar – This recipe uses granulated sugar, but it can be swapped with organic cane sugar, coconut sugar, or monkfruit.
Flour – I made these bars with Cloud9’s gluten-free all-purpose flour blend. If you are not gluten-free, use regular all-purpose flour.
Cornstarch – Required to make the blueberry layer thick. It can be replaced with arrowroot powder.
Blueberries – Fresh or frozen will work.
Lemon – We’ll be using both the zest and juice. You could use bottled lemon juice and dried lemon zest, but the flavor won’t be as true.

Pro Tip: Want a perfectly sliced blueberry lemon bar? Don’t drag the knife blade, and clean it after each cut.

Lemon Blueberry Bars Recipe Tips & Tricks
Cool Time – Allow these lemon blueberry bars to cool fully in the pan. If removed too soon, they will not hold shape. If you need them to cool faster, place the pan in the fridge to speed up the process.
Removal – It is key to prepare the baking pan for easy removal. First, give the pan a generous spray with non-sticking baking spray or grease it well with butter/shortening. Next, line the pan with two pieces of parchment paper in a crisscross fashion. Third, run a butter knife around the exposed corners of the bars to release any caramelized sugar bits.
Slicing – Do not attempt to cut these bars while still warm. They need to be 100% cooled for them to hold their shape. With a sharp knife, make each cut in one single motion. Clean the knife between each slice. Helpful hint: You can chill the bars briefly in the freezer for 5 minutes to make slicing even easier and cleaner.

Can you use stevia instead of sugar?
I haven’t personally tried the recipe with stevia but I have with monkfruit.
Hi! Can you use frozen blueberries instead of fresh?
Yes, absolutely
That being said, theyre soooooogoooooooodddddd
I’m so glad to hear that Ashley
This looks wonderful, but how is it dairy free with butter? What do you think I could substitute for the butter? Thank you!
Hi Tashanna, if you take a moment and scroll down to the recipe card you’ll see that it calls for dairy-free butter. So yes, it is dairy-free. I love baking with becel plant-based bricks.
Oh, I didn’t see that. Thank you! I appreciate it!
Hi Katie,
I don’t think your recipe card image has updated, it only states regular butter, no * sign to point to suggested vegan butter alternatives and if it’s a 1:1 substitution, which is why I think you are getting so many comments about it not being vegan. I’d be happy to send you a screen shot of what I’m seeing on the recipe card. If you’d like to reach out via email.
I’m trying to stay away from seed oils which are prolific in vegan butter options. Have you by chance experimented with coconut oil or sustainably sourced palm shortening?
Oh my goodness Melinda, you are right?! I am ohrribly embarassed. There was an unpublished update on my recipe card. Thank you for pointing that out to me. It has been fixed. As for the substitution, I haven’t experimented but would start with a palm shortening as it has a similar melting point.
Just so you know uh butter is dairy. Please stop advertising as dairy free!
Hi Lilly, you must not have actually read the post and/or recipe as it clearly calls for dairy-free butter. But I appreciate your concern. Be well.
It says to combine vanilla, butter and cream but I dont see where the recipe calls for cream. Is this a typo? I have dairy free butter but not sure the substitute fir cream if thats needed
It’s a typo. It means to beat (to cream) the butter and vanilla together. Thank you for letting me know!
I made this dessert today and it turned out really well! Unfortunately the dough for the crust was not crumbly, rather, a smooth paste. I just separated the pieces by hand. I may reduce the amount of butter next time. Besides that, everyone loved it.
The butter was probably a bit too warm but I’m so glad to hear you problem solved and made them!
Is the flour the same measurement if I use regular flour?
Yes, it is.
Hi- I’d love to make this today! Does anyone know if I can use coconut oil for the butter? I dont have a dairy free sub for butter. Thanks!
Yes, you can. Note that the texture and taste will change though.
