Gluten-Free Chocolate Chip Muffin Ingredients & Substitutions

This recipe is written as gluten-free and dairy-free. That said, I did test it with “regular” ingredients and made notes of alternatives or swaps so that everyone could enjoy it.

Here are a few key ingredients for these muffins, but make sure you scroll to the bottom of the recipe card for the complete ingredient list.

Dry Ingredients

Flour: I made this cake with XO Baking gluten-free all-purpose flour blend. If you are not gluten-free, swap the flour with regular all-purpose flour.

Granulated Sugar: White sugar is the classic flavor profile for chocolate chip muffins. However, it can be swapped for organic cane sugar or coconut sugar.

Baking Powder: This creates that beautiful bakery-style rise.

Chocolate Chips: Use whatever style best fits your dietary needs. I went with Pascha plant-based mini chocolate chips.

Wet Ingredients

Butter: Use whatever salted butter best fits your dietary needs. I prefer baking with Becel plant-based bricks.

Oil: Any neutral-tasting oil will work. I used vegetable oil.

Eggs: If vegan or egg-free use a liquid egg replacer like Just Egg, aquafaba, or 2 flax eggs. Note the final texture will not be quite as fluffy.

Milk: Use whatever type of milk best suits your dietary needs. If you are not dairy-free I highly suggest using buttermilk. I used unsweetened almond milk.

Vanilla Extract: Pure vanilla extract will always be supreme but use whatever is in your pantry.

Easy Gluten-Free Chocolate Chip Muffins Step-By-Step Instructions

Grab a large mixing bowl, a spatula and/or whisk, and a muffin pan. Let’s make the most incredible dairy-free gluten-free chocolate chip muffins.

1. Prepare a muffin pan with 12 liners and a generous spray of non-stick baking spray.

2. Combine the butter, oil, sugar, eggs, and vanilla and whisk together. Add the milk and whisk together again.

3. Measure in the flour, baking powder, baking soda, and salt and begin to stir. When the batter is about half mixed, add the chocolate chips and continue to fold until everything is combined.

4. Cover the bowl with a kitchen towel and set aside to rest while the oven preheats. This creates a fluffier muffin and a taller top.

5. Preheat the oven to 425ºF and divide the batter evenly into the muffin pan. If desired, top with additional chocolate chips.

6. Bake at 425ºF for 5 minutes, then reduce the heat to 350ºF (don’t open the door) and bake for another 7-10 minutes or until a toothpick comes out clean or with a few moist crumbs. Allow the muffins to cool in the pan for 5 minutes before removing. Enjoy!

Storing and Freezing Instructions

To store these amazing one-bowl gluten-free chocolate chip muffins, keep them at room temperature in an airtight container for up to 5 days. Likewise, they can be frozen for up to 6 months.

Note: as with all gluten-free baking, these muffins are best when enjoyed right away and will dry out as each day passes. 

Pro Tip: Quickly warm them in the microwave or oven and serve with a pat of butter. Yum!

Ingredients

  • 1/4 cup (57g) salted butter, melted and cooled *regular or plant-based
  • 1/4 cup (60ml) vegetable or canola oil
  • 1/2 cup (120ml) milk, room temperature *regular or plant-based
  • 2 large eggs, room temperature
  • 1 tablespoon (15ml) vanilla extract
  • 1 3/4 cups (210g) gluten-free flour 1:1 baking blend
  • 1 cup (200g) granulated sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon fine sea salt
  • 1/2 teaspoon baking soda
  • 1 cup (168g) chocolate chips *regular or plant-based

Instructions

  1. Prepare a muffin pan with 12 liners and a spray of non-stick baking spray.
  2. Combine the butter, oil, milk, eggs, and vanilla in a mixing bowl and whisk together until well combined.
  3. Measure in the flour, sugar, baking powder, salt, and baking soda and gently fold together. Once the dry ingredients have been incorporated about halfway, add the chocolate chips and continue to fold until the batter is just combined.
  4. Cover the mixing bowl with a clean kitchen towel and set aside to rest while the oven preheats.
  5. Preheat the oven to 425ºF and divide the batter evenly into the muffin pan.
  6. Bake for 5 minutes and then reduce the oven temperature to 350ºF. Do not open the oven door at this point. Bake for another 7-10 minutes or until the tops begin to turn a light golden brown.
  7. Remove from the oven and allow the muffins to cool in the pan for 5 minutes before removing to fully cool. Enjoy!
  8. Leftover muffins can be stored at room temperature in an airtight container for up to 5 days or frozen for up to 3 months.
