Ingredients & Substitutions

As always, I’ve tested this recipe with regular ingredients and their gluten-free and vegan swaps to ensure eggnog pie success for everyone.

Here are a few key ingredients for this pie, but make sure you scroll to the bottom of the recipe card for the complete ingredient list.

Gingersnap Cookies: Make sure you use crunchy gingersnap. Not soft. Here’s a gluten-free vegan recipe if you are on a budget or can’t find any at the store. Ensure you bake them longer than the recipe calls for (approximately 20 minutes) to get them as crispy as possible. Graham crackers, nilla wafers, digestive biscuits, or Oreos would all work as long as they are finely ground into a coarse sand texture.

Butter: Use whatever butter fits your dietary preferences/needs such as vegan, lactose-free, or regular.

Instant Vanilla Pudding: Jello makes a fabulous boxed instant vanilla pudding but any brand will work.

Eggnog: Any eggnog option such as oat nog, almond nog, coconut nog, or good old regular eggnog will work. The higher the fat content the better. If you cannot find eggnog, use regular milk and increase the nutmeg to 1 tablespoon.

Whipping Cream: Regular, lactose-free, and plant-based whipping cream will all work.

Rum: Optional, but delicious if you’re an “eggnog & rum” type person. You can use 1 tablespoon of real rum or 1 teaspoon of rum extract.

Easy Step-By-Step Instructions

With 8 ingredients and 6 simple steps, youโ€™ll enjoy a slice of classic no-bake eggnog pie in no time! Hereโ€™s how to make it.

1: Prepare the crust. Blend, process, or crush the gingersnap cookies into fine crumbs. Combine with the melted butter until a coarse-like sand texture is achieved. Firmly press the crust mixture into a pie dish and place it in the freezer while you prepare the filling.

2: Make the filling. In a mixing bowl or stand mixer, whisk together the instant pudding mix, eggnog, rum (if using), nutmeg, cinnamon, and salt for 5 minutes or until thickened. Set aside.

Step 3: Prepare the whipped cream. In a separate bowl, beat the whipped cream on high until stiff peaks are achieved.

Step 4: Fold the filling. Gently fold the whipped cream into the eggnog filling. Take your time and be careful not to knock the air out of the whipped cream.

Step 6: Chill. Pour the eggnog filling into the crust. Place it into the refrigerator and allow it to chill for at least 4 hours or overnight for best results.

Step 7: Decorate. Remove the pie from the fridge and top with whipped cream and gingerbread cookies if desired. Refrigerate until ready to serve.

No-Bake Eggnog Pie Recipe Success Tips

Letโ€™s set you up for pie success with these helpful tips and tricks.

  • Make sure the pudding mixture is instant and not stovetop.
  • Be very careful when folding the eggnog filling and whipped cream. If you are too rough you will beat the air out of the whipped cream and the pie will not set.
  • Donโ€™t skimp on the chill time. No-bake eggnog pie needs a long time to chill to properly set.

How To Store/Freeze Eggnog Pie

This easy no-bake eggnog pie can be stored in an airtight container for up to 5 days in the fridge.

You can even freeze the entire pie if desired. However, whipped cream does not freeze well. I recommend topping it with whipped cream after it has been thawed and is ready to serve.

To safely thaw, remove it from the freezer and place it in the fridge overnight.

Allergy-Friendly Eggnog Pie Recipe FAQs

Why isnโ€™t my eggnog pie firm?

No-bake eggnog pie has a soft, not firm, texture. It is still crucial for chilling time to set properly. It needs a minimum of 4 hours in the refrigerator. I always chill it overnight to ensure success.

Can I use a premade crust?

Short on time? A storebought pre-made graham cracker crust is a scrumptious idea. I recommend placing the tin plate into a pie dish for extra stability.

I can’t find eggnog!

Eggnog all sold out? Don’t stress. Use whatever kind of milk is in your fridge (the higher the fat content the better) and increase the nutmeg to 1 tablespoon and the cinnamon to 1 teaspoon.

Gingersnap Crust

  1. Blend the cookies into crumbs in a food processor or blender. Alternatively, place them in a large ziplock bag and crush them with a heavy rolling pin.
  2. Add the melted butter and mix until a coarse sand-like texture is achieved.

  2. In a separate mixing bowl with electric beaters or a stand mixer, whisk the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the eggnog mixture. Be careful to not beat the air out of the whipped cream.
  4. Place the filling into the prepared crust and spread evenly. Allow it to chill in the fridge for at least 4 hours or overnight for best results.
  5. Top with whipped cream and gingerbread cookies if desired. Enjoy!
  6. Store leftover eggnog pie in an airtight container in the fridge for up to 5 days or frozen for up to 6 months.

  1. This no-bake eggnog pie was delightful! I made it as a gluten-free version. I have never made a no bake pie with instant pudding but the texture was so nice. Very light and airy. And not too sweet! It was a hit with the family. I would definitely make it again. Thank you Katie!

  2. Absolutely delicious! My family loved it. I accidentally bought stove top pudding. I tossed the mixture on the stove and cooled in the fridge before pouring into the crust. I topped it with eggnog whip cream.

I will be making this again and shared the recipe with my family.
