Gluten-Free Brownies Ingredients & Substitutions

As always this recipe is gluten-free and dairy-free. That said, I test each recipe with “regular” ingredients and make notes of alternatives or swaps so that everyone can enjoy it.

Here are a few key ingredients for these dairy-free gluten-free brownies but make sure you scroll to the bottom recipe card for the complete ingredient list.

Butter – Becel plant-based bricks are my personal favorite for baking but any brick-style dairy-free, vegan, lactose-free, or regular butter will work.

Sugar – This recipe uses granulated sugar to balance the rich chocolate flavor and keep the brownies as moist as possible. It can be swapped with organic cane sugar or coconut sugar.

Eggs – Eggs add richness, texture, and structure to these brownies. If you are egg-free or vegan, you can use a liquid egg replacer like Just Egg.

Flour – I made these brownies with XO Baking gluten-free all-purpose flour blend. If you are not gluten-free, use regular all-purpose flour. Note that gluten-free flour blends can vary in weight so I recommend measuring by the cup.

Cornstarch – Gives an extra chewy texture. Can be replaced with arrowroot powder or more flour.

Cocoa Powder – I prefer using a Dutch process cocoa powder but any kind in your baking pantry will work.

Chocolate Chips – Pascha chocolate is my preferred vegan chocolate chip but Enjoylife makes a fabulous one as well. Use whatever type fits your dietary need/preference.

Dairy-Free Brownies Step-By-Step Instructions

You will need a large mixing bowl, a spatula, and an 8×8-inch baking pan. Let’s get started!

1: Prepare an 8×8-inch baking pan with non-stick baking spray and two pieces of parchment paper, crisscrossed.

2: Place the butter in a medium pot and allow it to melt on medium-high. Once melted whisk in the sugar and cocoa powder. Remove from the heat.

3: Add in the eggs and vanilla and whisk vigorously until fully combined and smooth.

4: Measure in the flour, cornstarch, and salt and mix until a thick brownie batter forms.

5: Add in the chocolate chips and fold until just combined.

6: Spread the brownie batter into the prepared pan and bake for approximately 18-22 minutes or until a toothpick inserted comes out with moist fudgy crumbs.

7: Allow to cool completely before slicing. Enjoy!

Pro Tip: Want a perfectly sliced brownie? Don’t drag the knife blade and clean it after each cut.

Gluten-Free Brownies Recipe Tips & Tricks

Cocoa Powder & Chocolate – Using both cocoa powder and chocolate chips increases the bold rich chocolate flavor. Want even more chocolate punch? User dark cocoa powder and dark chocolate chips.

Melted Butter – For the fudgiest, chewiest, and most moist brownie texture, the butter must be melted and hot. Not room temperature, not softened, but melted.

Do Not Overmix – Once the dry ingredients have been added, mix until there are no dry streaks left and no further. Overmixed brownies will have a tough texture.

Bake Time – Brownies can be tricky to tell when they are properly baked. Check the brownies at the 18-minute mark with a toothpick. If it comes out with wet batter, it needs more baking time. If it comes out with moist fudgy crumbs, they are perfectly baked. If the toothpick comes out without crumbs, they are overbaked.

Cool Time – Once the brownies have been removed from the oven, allow them to cool in the pan for 15 minutes. After 15 minutes, use the parchment paper pieces to lift the brownies out of the pan and place them on a wire rack to fully cool. This makes sure the edges of the brownies don’t overbake and get too hard/crunchy.
