Description

A burst of bright lemon yum in every bite. You’re going to love these easy homemade lemon rice krispie treats. They are the perfect treat for all the lemon lovers in your life. Bonus: the recipe can be made gluten-free, vegan, dairy-free, or just plain “regular.”


Ingredients

  • 1/2 cup (113g) dairy-free salted butter
  • 10 cups (450g) mini marshmallows, divided (8cups/2cups)
  • 6 cups (192g) gluten-free rice cereal
  • 1 package (99g) instant lemon pudding mix
  • 1 cup (168g) vegan white chocolate chips
  • 1 teaspoon coarse sea salt
  • optional: melted white chocolate and lemon zest for topping

Instructions

  1. Prepare an 8×8-inch baking pan with non-stick baking spray and parchment paper.
  2. In a large microwave-safe bowl, combine the butter and 8 cups of mini marshmallows and cook on high heat for 1 minute. Remove from the microwave and gently stir.
  3. Heat the butter and marshmallow mixture for one more minute in the microwave. Remove from the microwave and gently stir until entirely melted.
  4. Add in the rice cereal, lemon pudding mix, and salt and gently stir until combined. Allow the mixture to cool for 1 minute.
  5. Gently fold in the remaining 2 cups of mini marshmallows and chocolate chips and mix until just combined.
  6. Place the mixture into the prepared pan and very gently spread and press down evenly.
  7. Top with a drizzle of melted chocolate and lemon zest if desired.
  8. Allow to fully cool and set before slicing. Enjoy!
  9. Store leftover treats in an airtight container at room temperature for up to 7 days or frozen for up to 6 months.
