Strawberry Rice Krispie Treats Ingredients & Substitutions

As always this recipe is gluten-free and dairy-free. That said, I do test each recipe with “regular” ingredients and make notes of alternatives or swaps so that everyone can enjoy it. 

Here are a few key ingredients for these squares but make sure you scroll to the bottom recipe card for the complete ingredient list.

Rice Cereal: I used Nature’s Path gluten-free and vegan puffed brown rice cereal. Gluten-free Rice Chex is also phenomenal in this recipe. If you are not gluten-free regular Rice Krispies Cereal will work.

Butter: I enjoy baking with Becel plant-based bricks but any dairy-free/vegan butter substitute will work. Coconut oil would also work. Use regular salted butter if you are not vegan or dairy-free.

Mini Marshmallows: 10 cups may seem like a lot, but trust me when I say it’s the perfect marshmallow-to-rice cereal ratio. Dandies is my go-to vegan marshmallow brand.

Strawberry Jell-O Mix: Essential to these no-bake squares. Double-check the brand you are using to make sure it’s gluten-free if need be. I like using Jell-O for gluten and dairy-free and Simply Delish for vegan.

Chocolate Chips: Pascha is my favorite vegan chocolate but Enjoy Life also has dairy-free chocolate chips. If you are not dairy-free or vegan, use regular chocolate chips.

Salt: Coarse sea salt adds a fabulous texture element, but whatever is in your pantry will work.

Strawberry Rice Krispie Treat Tips & Tricks

Let’s double-check all our no-bake rice krispie strawberry treat bases to ensure we have the most incredible life-changing gluten-free and dairy-free sweet treat.

Measure Everything First: Because these are extra ooey gooey marshmallowy and come together so quickly, you’ll want to have everything measured out and ready to go when you start.

Prepared Pan: Sticky, in the best way possible, ensure the pan is prepared with non-stick baking spray and parchment paper for easy removal.

Be Gentle: In everything, be gentle. Gently stir the ingredients together and, again, very gently spread the strawberry rice krispie treats into the pan. Don’t pack them down, a gentle press down to even the top is sufficient.

Step By Step Instructions

1: In a large microwave-safe bowl, combine the butter and 8 cups of marshmallows and microwave on high for 1 minute. Remove from the microwave and stir. Return to the microwave for 1 more minute.

2: Add in the rice cereal, strawberry jello mix, and salt and gently stir until fully melted and combined. Allow the mixture to cool for 5 minutes.

3: Stir in the remaining 2 cups of marshmallows and chocolate chips and gently fold until combined. Note: Too much mixing and the chocolate chips will begin to melt.

4: Pour the mixture into the prepared pan and gently spread evenly.

Pro Tip: I give my hands a little spray of non-stick baking spray and gently pat the rice krispie treats down by hand without the sticky mess.

5: Top with additional chocolate chips and coarse sea salt if desired. Allow the strawberry rice krispie treats to cool to room temperature (approximately 30-40 minutes) before serving.

6: Slice, serve, and devour!

How To Store Gluten-Free Dairy-Free Strawberry Rice Krispie Treats

Store this sinfully scrumptious strawberry rice krispie treat in an airtight container at room temperature for up to 7 days.

To freeze, I recommend slicing them up first and then tightly wrapping them either individually or all together with plastic wrap and then storing them in an airtight container.

A slow thaw is best, so pop that strawberry rice krispie treat in the fridge overnight to keep as much moisture as possible.

Strawberry Rice Krispie Square FAQs

Can I substitute a different instant jell-o mix?

Absolutely! Pick whatever flavor of instant jello mix you like! Just ensure the quantity is the same as listed below on the recipe card. I think raspberry or cherry would be phenomenal.

Can I Double This Recipe?

Double it. Triple it. Heck, you could even quadruple it!

Help! Everything Is So Sticky!

Because these are the most ooey-gooey of marshmallow rice krispie squares, stickiness is inevitable. Ensure your pan is properly prepared ahead of time with non-stick baking spray and parchment paper for easy removal.

For instance, I will also give my hands a quick spray with the non-stick baking spray when I gently press the treats down in the pan to prevent my hands from sticking. Works like a charm!

Can I Make This In A 9×13 Pan?

Yes, you can make this recipe as is in a 9×13-inch pan. As a result, you’ll end up with more strawberry rice cereal squares because they will be thinner. 

Do I have To Use Chocolate Chips?

If you are not a chocolate fan, omit the chocolate chips entirely. Or better yet, swap them for something you do like such as: almonds, pistachios, sprinkles, white chocolate, or coconut. The possibilities are endless.

Strawberry Rice Krispie Treats

  • 1/2 cup (113g) dairy-free salted butter
  • 10 cups (450g) mini marshmallows, divided (8cups/2cups)
  • 6 cups (192g) gluten-free rice cereal
  • 1 package (99g) strawberry jell-o mix
  • 1/2 cup (50g) vegan chocolate chips
  • 1 teaspoon coarse sea salt
  • optional: additional chocolate chips and coarse sea salt for topping

Instructions

  1. Prepare an 8×8-inch baking pan with non-stick baking spray and parchment paper.
  2. In a large microwave-safe bowl, combine the butter and 8 cups of mini marshmallows and cook on high heat for 1 minute. Remove from the microwave and gently stir.
  3. Heat the butter and marshmallow mixture for one more minute in the microwave. Remove from the microwave and gently stir until entirely melted.
  4. Add in the rice cereal, strawberry jell-o mix, and salt and gently stir until combined. Allow the mixture to cool for 5 minutes.
  5. Gently fold in the remaining 2 cups of mini marshmallows and chocolate chips and mix until just combined.
  6. Place the mixture into the prepared pan and very gently spread and press down evenly.
  7. Top with additional chocolate chips and coarse sea salt if desired.
  8. Allow to fully cool and set before slicing. Enjoy!
  9. Store leftover treats in an airtight container at room temperature for up to 7 days or frozen for up to 6 months.
