Simple ingredients and refined sugar-free, this easy edible, vegan, and gluten-free cookie dough is a snack staple in my house. Full of feel-good nutrition, you’re going to love it too, and here’s why:

As always this recipe is gluten-free and vegan. That said, I do test each recipe with “regular” ingredients and make notes of alternatives or swaps so that everyone can enjoy it.

Here are a few key ingredients for this gluten-free cookie dough but make sure you scroll to the bottom recipe card for the complete ingredient list.

Dry Ingredients

Oat Flour: This can be storebought or homemade. If you are making it at home, be sure to use gluten-free oats if need be. If you are not gluten-free, regular whole-grain oats will work instead. If you are oat intolerant, this can be swapped with almond flour.

Coconut Flour: I adore the added taste and texture the coconut flour adds. It can be swapped for more oat or almond flour if you do not have easy access to it.

Salt: Coarse sea salt adds a fabulous texture element, but whatever is in your pantry will work.

Chocolate Chips: Pascha’s 70% dark chocolate stevia-sweetened chips are what I used. If you are not dairy-free/vegan Lily’s has a great stevia-sweetened chocolate chip too. Regular chocolate chips will also work if you are not concerned about refined sugar.

Wet Ingredients

Maple Syrup: Use pure maple syrup to keep it refined-sugar-free. This can be swapped with agave, date syrup, or honey.

Coconut Oil: This can be swapped with vegan or regular butter. You could also use a nut butter.

Vanilla Extract: Pure vanilla extract will always be supreme but use whatever is in your pantry.

Easy Step-By-Step Instructions

Grab a large mixing bowl, a spatula, and a cookie scoop or spoon. Let’s make the most incredible vegan and gluten-free cookie dough.

1. In a large mixing bowl combine the oat flour, coconut flour, and coarse sea salt.

2. Pour in the maple syrup, melted coconut oil, and vanilla extract. Stir until a dough forms.

3. Add in the chocolate chips and mix until combined. Scoop into cookie dough balls or enjoy as is with a spoon.

4. Store the leftover edible chocolate chip cookie dough in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 6 months.

  • 1 cup (90g) gluten-free oat flour
  • 1/4 cup (28g) coconut flour
  • 1/2 teaspoon coarse sea salt
  • 1/2 cup (120ml) pure maple syrup
  • 3 tablespoons (45ml) coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/21 cup (80-160g) vegan stevia-sweetened chocolate chips *personal preference

Instructions

  1. In a large mixing bowl whisk together the oat flour, coconut flour, and salt.
  2. Add in the maple syrup, melted coconut oil, and vanilla extract and mix until a dough forms.
  3. Gently fold in the chocolate chips.
  4. Scoop and form into cookie dough balls if desired or enjoy as is with a spoon.
