Funfetti Blondies

I needed a sweet treat. Something easy. Something fun. And something totally yummy. I spied a bottle of the funnest confetti sprinkles sitting on my sprinkle rack and it practically leaped off the shelf. Sprinkles are the literal fun in any and all baked goods. They bring the party. And gosh darn…Funfetti Blondies sounded too good to be true. So I grabbed that bottle of sprinkles and started mixing.

What is a Funfetti Blondie?

I liken a blondie to a bar cookie. It has that supreme chewy thick texture of a cookie but baked and served like a brownie. They whip up like a cookie as well. I baked mine in a 9×13 pan for a thinner blondie but if you prefer your blondies uber thick feel free to bake them in an 8×8 pan just be aware that the baking time will increase.

How to Balance A Sweet Funfetti Blondie

To refine the very typical “sweet” factor of a blondie I added a generous 2 teaspoons of coarse sea salt. It helps balance out that brown sugar and all those decadent white chocolate chips I rather indulgently added in.

Funfetti Blondies

Description

Thicky and chewy dairy-free funfetti blondies loaded with white chocolate chips, coarse sea salt, and a healthy dose of fun sprinkles. An easy recipe to satisfy that sweet tooth craving.

Funfetti Blondies


  • 1 cup dairy-free salted butter, room temperature


  • 2 cups brown sugar


  • 1 large egg, room temperature


  • 1 large egg yolk, room temperature


  • 1 teaspoon vanilla extract


  • 1 teaspoon almond extract


  • 2 cups all-purpose flour *can sub gluten-free flour 1:1 baking blend


  • 1 teaspoon coarse sea salt


  • 1 teaspoon baking powder


  • 1 cup dairy-free white chocolate chips


  • ½ cup confetti sprinkles *gluten-free if need be



Instructions

Funfetti Blondies

  1. Preheat the oven to 350 degrees.

  2. Spray and parchment line a 9×13 inch pan.

  3. In the bowl of a stand mixer with the paddle attachment combine the butter and brown sugar on high and mix until light and fluffy. Approximately 2 minutes.

  4. Add in the egg, egg yolk, vanilla extract, and almond extract and mix on high for another 2 minutes.

  5. Mix in the flour, salt, and baking powder until just combined.

  6. Fold in the white chocolate chips and confetti sprinkles until just combined.

  7. Spread the batter into the prepared baking tray.

  8. Bake for approx 18-20 minutes or until the edges are a light golden brown and the very center appears just slightly under-baked.

  9. Let fully cool in the baking tray. Once cool remove the blondies and slice into 24 servings.

  10. Enjoy! Store leftover blondies in an airtight container for up to 7 days at room temperature.
