Funfetti Banana Bread

Let’s make banana bread. But like, not just any banana bread, the most fun of fun dairy-free funfetti banana bread! Colourful sprinkles take this ordinary banana loaf to extraordinary. But let’s not stop there. Should we glaze it and double up on the sprinkles? Yep, the inner 6-year-old in me thinks this is clearly the best choice.

Ain’t Nothing Better Than Dairy-Free Funfetti Banana Bread

I like my banana bread moist and full of banana flavour. Don’t bother me with a loaf that is dry and sparse on bananas. And if you’re going to have add-ins…let’s really add it in, you know what I mean. A slice of freshly baked banana bread is everything comforting to me and I see no reason to skimpy. Comfort foods should be exactly that…comforting!

Banana Bread Add-Ins

To keep life interesting, this funfetti banana bread forgoes the typical chocolate chips or walnuts and goes full-on sprinkles. Copious sprinkles. Oodles of sprinkles. Sprinkles by the handful. No, I’m just kidding, don’t do sprinkles by the handful, that would be unsanitary. ? But clearly, you get the point, I loaded this loaf with sprinkles.

How To Make Banana Bread Moist

First and foremost, the key to an uber moist and flavourful dairy-free banana bread is using overripe bananas. Like those brown splotchy soft mushy ones that no one will eat…those are perfect! Peel ’em and toss ’em in the bowl of a stand mixer and let the beater attachment mash it up for you. Start the mixer on low and slowly increase to medium. You want a mashed potato-like consistency. Don’t have a mixer? No problem! Grab a fork or potato masher and get to mashing.

Glaze and More Sprinkles!

To finish this funfetti load of banana yum, I’ve paired it with a classic vanilla glaze and, yep you guessed it, more sprinkles. This glaze is only 3 ingredients: icing sugar, milk, and vanilla. Mix it up as the banana bread is cooling and it will be ready to drizzle, drip, or drown your banana bread within no time. Don’t forget a generous splash of extra sprinkles on top.

Funfetti Banana Bread (dairy-Free)

Description

The most fun dairy-free funfetti banana bread recipe! Packed full of bananas and colorful sprinkles, this glazed and moist banana loaf is everything fun and delicious.


Ingredients

Funfetti Banana Bread

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ½ cup dairy-free salted butter, softened
  • ½ cup brown sugar, firmly packed
  • ⅓ cup dairy-free yogurt
  • 2 large eggs, room temperature
  • 4 bananas, overripe
  • 1 teaspoon vanilla extract
  • ½ cup sprinkles *

Glaze

  • 2 cups icing sugar
  • 4 tablespoons dairy-free milk
  • 1 teaspoon vanilla extract
  • ¼ cup sprinkles

Instructions

Funfetti Banana Bread

  1. Preheat the oven to 350 degrees and prepare a 9×5 inch loaf pan with non-stick baking spray and parchment paper.
  2. In the bowl of a stand mixer add the overripe bananas and slowly mash with the beater attachment on low. Turn up to medium until a mashed potato-like consistency is achieved.
  3. Add in the butter, sugar, yogurt, eggs, and vanilla and mix until smooth.
  4. Add in flour, baking soda, and salt and mix until the batter is just combined. Be careful to not overmix.
  5. With a spatula hand mix in the sprinkles.
  6. Bake for approximately 1 hr or until a toothpick inserted in the center comes out with a few moist crumbs on it.
  7. Allow to cool in the pan for 10 minutes and then invert on a cooling rack to fully cool.

Glaze

  1. In a small mixing bowl combine the icing sugar, vanilla, and milk (one tablespoon at a time) until the desired glaze consistency is achieved.
  2. Drizzle glaze on top of the fully cooled banana bread.
  3. Sprinkle the sprinkles on top of the glaze. Enjoy.
  4. Store leftover banana bread in an airtight container for up to 7 days.
