Eggnog Bundt Cake

A bundt cake?! Who am I?! It’s pretty clear that I’m a lover of layers but there’s something to be said about a cake that comes together in no time flat without any finesse so to speak. And a bundt cake is exactly that. I’ve kept it even easier by using a cake mix as the base with a few “doctored-up” add-ins to level up this bundt cake from basic to Eggnog Bundt Cake ba-ZING-ga!

My Favourite Flavor of the Season

Eggnog: it’s not just a drink. it’s a way of life. ? I get irrationally excited when I spy that first carton of eggnog in the grocery store aisle. Eggnog protein shakes, eggnog pancakes, eggnog cookies, eggnog cake, eggnog straight up, and the best eggnog…served with a splash of rum. It’s safe to say that I am an eggnog gal. So when it comes to a quick festive dessert eggnog bundt cake only seemed natural.

An Easy Bundt Cake Recipe From A Box Mix

This eggnog bundt cake will whip up in no time. Seriously. First, you pretty much dump all the ingredients together in a bowl and go. Second, the trick to a bundt cake is greasing your pan liberally. I gave my bundt cake pan a generous once over with non-stick cooking spray and then another quick overall spray for good measure.

How To Remove a Bundt Cake

There’s no worse feeling than flipping your bundt cake over only to find it baked onto your pan with no hope of revival. Talk about Christmas grinch. So be as generous with your non-stick spray as you hope Santa is with the Christmas gifts. ? Oh and make sure you grab a bottle of cute holiday sprinkles too because…well…sprinkles are the equivalent of mermaids and unicorns in a bottle.

Eggnog Bundt Cake

Description

Easy and festive dairy-free eggnog bundt cake using a cake mix and covered with an eggnog glaze. Great for a simple but totally delicious holiday dessert.


Ingredients

EGGNOG BUNDT CAKE


  • 1 box dairy-free white cake mix *use gluten-free cake mix if you are gluten-free


  • 1 (102 g) package instant vanilla pudding mix


  • 1 ½ teaspoon nutmeg


  • ½ teaspoon fine sea salt


  • 1 cup dairy-free or regular eggnog, room temperature


  • 4 large eggs, room temperature


  • ¼ cup dairy-free or regular yogurt, room temperature


  • 1 teaspoon vanilla extract


EGGNOG GLAZE


  • ¼ cup dairy-free or regular salted butter, melted


  • ¼ cup dairy-free or regular eggnog


  • ½ teaspoon rum extract *optional


  • 2 cups icing sugar


  • ½ teaspoon nutmeg


  • ½ teaspoon fine sea salt


  • optional: Sprinkle Pop “Christmas Traditions” sprinkles



Instructions

EQUIPMENT:

EGGNOG BUNDT INSTRUCTIONS:

  1. Preheat the oven to 350 degrees and generously spray the bundt pan with non-stick cooking spray.

  2. In the bowl of a stand mixer combine the cake mix, pudding mix, nutmeg, and salt together with the whisk attachment.

  3. Add in the eggnog, eggs, yogurt, and vanilla and mix until combined.

  4. Pour the batter in the bundt pan and bake for 45-50 minutes or until a toothpick comes out with a few crumbs.

  5. Cool in pan for 10 minutes and then invert on a cooling rack to fully cool.

EGGNOG GLAZE INSTRUCTIONS:

  1. In the bowl of a stand mixer combine all the ingredients and whisk until combined and smooth.

CAKE ASSEMBLY:

  1. Place the cooled bundt cake on a plate or cake stand.

  2. Slowly pour the glaze over the top of the bundt cake.

  3. Top with fun festive sprinkles. Enjoy!
