Chai Oatmeal Cookies

Description

Warm and chewy dairy-free spiced chai oatmeal cookies with dried mixed berries.


Ingredients

CHAI SPICE:

  • 3 tbsp. cinnamon

  • 1 tbsp. cardamom

  • 1 tbsp. ginger

  • ½ tbsp. allspice

  • ½ tbsp. cloves

  • ½ tbsp. nutmeg

COOKIES:

  • ½ cup dairy-free salted butter, room temperature

  • ½ cup brown sugar

  • ½ cup white sugar

  • 1 large egg, room temperature

  • ½ tsp. vanilla extract

  • ½ tsp. baking soda

  • 1 tsp. coarse sea salt

  • 3 tsp. chai spice

  • ¾ cup all-purpose flour

  • 1 ½ cups rolled oats

  • 1 cup dried mixed berries *I used dried strawberries, cranberries, and blueberries

EQUIPMENT:

 

CHAI SPICE:

  1. Combine all the ingredients in a jar.

  2. Secure the lid on tight and shake well to mix.

  3. Store in a dry place at room temperature for up to a year.

COOKIES:

  1. Preheat oven to 350 degrees and line 2 cookie sheets with parchment paper.

  2. In the bowl of a stand mixer cream butter and sugars on high for 3 minutes until light and fluffy with the paddle attachment.

  3. Add in egg, and vanilla extract and mix until fully incorporated. Scrape down the sides of the bowl.

  4. Add in flour, oats, baking soda, chai spice, and salt into the bowl and mix on low until fully incorporated and dough forms.

  5. Mix in the dried mixed berries until just incorporated.

  6. Using a 1.5 tbsp. cookie scoop drop cookie dough onto parchment-lined cookie trays approximately 2 inches apart and bake for 10-12 minutes or until the edges are lightly golden brown and the centers appear just slightly under-baked.

  7. Let cool on the tray for at least 10 minutes before removing it to a cookie rack to fully cool. Enjoy!
