Chai Oatmeal Cookies (Dairy-Free)

Description

The perfect autumn afternoon snack! These dairy-free oatmeal chai cookies have crisp golden edges with chewy centers. Loaded with warm chai spices, rolled oats, and dried mixed berries, these cookies are an absolute fall must-bake.


Ingredients

Chai Spice

  • 3 tablespoons ground cinnamon

  • 1 tablespoon cardamom

  • 1 tablespoon ginger

  • ½ tablespoon allspice

  • ½ tablespoon cloves

  • ½ tablespoon nutmeg

Oatmeal Chai Cookies

  • ½ cup dairy-free salted butter, room temperature

  • ½ cup brown sugar

  • ½ cup granulated sugar

  • 1 large egg, room temperature

  • ½ teaspoon vanilla extract

  • ½ teaspoon baking soda

  • 1 teaspoon coarse sea salt

  • 3 teaspoons chai spice

  • ¾ cup all-purpose flour

  • 1 ½ cups rolled oats

  • 1 cup dried mixed berries *I used dried strawberries, cranberries, and blueberries


Instructions

Chai Spice

  1. Combine all the ingredients in a jar.

  2. Secure the lid on tight and shake well to mix.

  3. Store in a dry place at room temperature for up to a year.

Oatmeal Chai Cookies

  1. Preheat the oven to 350 degrees and line 2 cookie sheets with parchment paper.

  2. In the bowl of a stand mixer cream butter and sugars on high for 3 minutes until light and fluffy with the paddle attachment.

  3. Add in egg, and vanilla extract and mix until fully incorporated. Scrape down the sides of the bowl.

  4. Add in flour, oats, baking soda, chai spice, and salt into the bowl and mix on low until fully incorporated and dough forms.

  5. Mix in the dried mixed berries until just incorporated.

  6. Using a 1.5 tbsp. cookie scoop place the cookie dough onto parchment-lined cookie trays approximately 2 inches apart and bake for 10-12 minutes or until the edges are lightly golden brown and the centers appear just slightly under-baked.

  7. Let cool on the tray for at least 10 minutes before removing it to a cookie rack to fully cool. Enjoy!
