Description

Light, fluffy, and covered in brown sugar glaze, these easy gluten-free and dairy-free spiced pear donuts are baked to autumn perfection.


Ingredients

Spiced Pear Donuts

  • 2 cups gluten-free 1:1 baking blend *can sub all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon all-spice
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon fine sea salt
  • 2 tablespoons coconut oil, melted *can sub dairy-free butter
  • 1 large egg, room temperature *can sub 1 flax egg
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 1 tsp pear extract *can sub vanilla extract
  • 1 cup dairy-free milk, room temperature
  • 2 medium ripe pears, diced

Brown Sugar Glaze

  • 1 cup brown sugar

  • 1/3 cup dairy-free milk

  • 1 tablespoon coconut oil

  • 1/2 teaspoon fine sea salt

  • 1 1/4 cup icing sugar


Instructions

Spiced Pear Donuts

  1. Preheat oven to 350 degrees and spray 2 donut pans with non-stick cooking spray.

  2. In the bowl of a stand mixer beat together the melted coconut oil, egg, pear extract (if using), and both sugars until fully combined.

  3. Add in the flour, baking soda, baking powder, cinnamon, nutmeg, all-spice, and salt and mix until just combined.

  4. With the mixer on low, slowly add in the milk and mix until just combined. A few lumps in the batter is fine.

  5. Using a spatula hand mix the diced pears into the batter. Mix until just combined.

  6. Scoop the batter into a large pastry bag and pipe into donut pans making sure to only fill each donut cavity 1/2 full. If you do not have a pastry bag carefully spoon the batter into each donut cavity.

  7. Bake for 9-11 minutes or until the edges are lightly brown and bounce back to the touch. Invert each pan onto a cooling rack and allow it to fully cool before glazing.

Brown Sugar Glaze

  1. In a medium pot, heat the brown sugar and milk over medium heat until it comes to a boil. Allow to boil for 4 minutes and remove from heat.

  2. Stir in the coconut oil until fully melted and smooth.

  3. With a whisk, mix in the icing sugar and salt until fully combined and smooth.

  4. Dip the top of each donut into the glaze and invert on a cooling rack to set. If the glaze gets too firm simply warm it back up and continue to dip donuts in until done. Enjoy!
