Donuts. Nothing quite compares to them. And they’re a lot like pizza in that even when they’re bad, they’re still pretty good. Growing up I was all for the chocolate-dipped, sprinkled, cream, or jelly-filled ones. You know the type, flashy and frilly.
I had the realization not too long ago that I’ve officially become an old person when I passed those extravagant glitzy donuts and went straight for the old fashioned sour cream glazed. And the truth is, I’ll gladly wave my granny flag 😉 if that means I get first dibs, especially for these baked Spiced Pear Donuts!

Now as much as I appreciate a fried fluffy yeast donut I simply don’t always have the time for them. Especially when I want a donut NOW. So here enters a baked donut. No rise or fry time required. Mix up that batter, pipe it into a donut pan, and right into the oven they go. Donut time in no time. Now that’s what I’m talking about! Can someone give me a donut hallelujah?!
That donut craving hit me the other day. The kind where I couldn’t wait. The kind that needed to devour a donut ASAP. I had some ripe pears sitting in my fridge that needed to be used up so why not make some spiced pear donuts. It certainly made sense to me.
These dairy-free baked spiced pear donuts whip up super fast and stay fluffy and moist. The brown sugar glaze ain’t too shabby either if I may say so myself. Grab those pears, spray a donut pan, and let’s get to eating…I mean baking!

Spiced Pear Donuts

Description
Easy to make baked spiced pear donuts that are light and fluffy. Covered in a brown sugar glaze these dairy-free donuts are totally delicious.
Ingredients
SPICED PEAR DONUT:

2 cups all-purpose flour

1 tsp. baking soda
-
¾ tsp. baking powder
-
1 tsp. cinnamon
-
1 tsp. all-spice
-
¼ tsp. nutmeg
-
½ tsp. fine sea salt
-
2 tbsp. coconut oil, melted
-
1 large egg, room temperature
-
⅓ cup brown sugar
-
⅓ cup white sugar
-
1 tsp pear extract *use vanilla extract if you do not have pear

1 cup almond milk
-
2 medium ripe pears, diced
BROWN SUGAR GLAZE
-
1 cup brown sugar
-
⅓ cup almond milk
-
1 tbsp. coconut oil
-
½ tsp. fine sea salt
-
1 ¼ cup icing sugar
Instructions

SPICED PEAR DONUTS

Preheat oven to 350 degrees and spray 2 donut pans with non-stick cooking spray.

In the bowl of a stand mixer beat together the melted coconut oil, egg, pear extract, and both sugars until fully combined.

Add in the flour, baking soda, baking powder, cinnamon, nutmeg, all-spice, and salt and mix until just combined.

With the mixer on low, slowly add in the milk and mix until just combined. A few lumps in the batter is fine.

Using a spatula hand mix the diced pears into the batter. Mix until just combined.

Scoop the batter into a large pastry bag and pipe into donut pans making sure to only fill each donut cavity 1/2 full. If you do not have a pastry bag carefully spoon the batter into each donut cavity.

Bake for 9-11 minutes or until the edges are lightly brown and bounce back to the touch. Invert each pan onto a cooling rack and allow to fully cool before glazing.
BROWN SUGAR GLAZE

In a medium pot, heat the brown sugar and milk over medium heat until it comes to a boil. Allow to boil for 4 minutes and remove from heat.

Stir in the coconut oil until fully melted and smooth.

With a whisk, mix in the icing sugar and salt until fully combined and smooth.

Dip the top of each donut into the glaze and invert on a cooling rack to set. If the glaze gets too firm simply warm it back up and continue to dip donuts in until done. Enjoy!
